The Restaurant:

The Game Bird restaurant, located in The Stafford London hotel in St James’s, is a contemporary tale about relaxed informal dining at any time of the day. A place to eat, drink and socialise, the focus is on modern British comfort cooking executed with style and panache. Dedicated to following the seasons and supporting local artisans including award-winning family owned farms, Executive Chef, James Durrant, has created a ‘theatre of the senses’ menu based on uncomplicated excellence, where local, seasonal produce sits alongside time honoured British classics.

The Executive Chef:

Among many other talented chefs you'll be working alongside our Executive Chef, James Durrant who has a wealth of over 20 years experience in the industry. From Michelin Star restaurants with Gordon Ramsey, Launching Maze - New York, winning the Caterer & Hotelkeeper Acorn Award, to launching the winner of the 2012 UK Pub of the Year; and thats just to name a few. 

The Role: Senior Chef De Partie

Key Accountabilities:

  • To run and manage a section
  • To prepare and cooking of food to the restaurant specific standards
  • Train, develop and supervise the apprentice / commis chef’s / Demi chefs
  • Awareness and implementation of waste controls
  • Manage section’s ordering, stock control and rotation
  • Adhere to the cleaning schedule for the kitchen
  • Understand the functional administration of the restaurant, i.e., docket procedures, stations, table numbers, food labelling etc
  • Detailed Knowledge of the full menu, and able to give a detailed description of all dishes
  • To work as part of the wider restaurant team
  • To comply with legal requirements under the H&S act 1974 and food hygiene
  • Adherence to all policies, procedures, standards, specifications, guidelines and training programmes
  • To escalate maintenance issues to the relevant parties.

Outcome, Results and Key Performance Indicators:

  • Compliance and monitoring restaurant standards with menu specification
  • Comply with all health and safety requirements
  • Adhere to the cleaning schedule and record action appropriately
  • Ensure the section works efficiently
  • To carry out all tasks in a reasonable time frame to ensure the smooth running of the areas
  • Compliance with food labelling and temperature controls
  • Development of skills within the section team
