Scope & General Purpose of Job  

The Restaurant Sous Chef supports the Head Chef with the production of high quality food for the 2 Rosette restaurant of the Hotel. To provide guests and visitors to Sopwell House with an efficient and personal service whilst maintaining the consistency and continuity and strive to continually improve.

Main Responsibilities

  • Prepare and present high quality dishes within company guidelines
  • Cooking with fresh, locally sourced ingredients
  • Ensuring any requested dietary needs are met
  • Keep all working areas clean and tidy and ensure no cross contamination
  • Prepare all mis-en-place or all relevant menus
  • Assist in positive outcomes from guest queries in a timely and efficient manner
  • Ensure food stuffs are of food quality and stored correctly
  • Contribute to controlling costs, improving gross profit margins, and other departmental and financial targets
  • Assist other departments wherever necessary and maintain good working relationships
  • Awareness departmental targets and strive to achieve them as part of the team

Essential Skills required for the role

  • Must have recent Rosette Restaurant experience
  • Must have the ability to multi-task while remaining focused on the goal.
  • Be able to express creativity through food selections, preparation and presentation.
  • Must be detail oriented.
  • Must have the ability to remain calm in high stress situations.
  • Be able to solve problems quickly under pressure.

Education required

  • Diploma or degree from accredited university in culinary arts or NVQ or related major
  • At least 3 years of related work experience.
  • Experience in a similar position and environment with a firm understanding of excellence in customer service, preferably in a 5* Hotel.
