RESPONSIBLE FOR : Cleanliness of the kitchen, deliveries, stock rotation, basic prep

GENERAL PURPOSE OF THE JOB: To keep the kitchen clean & tidy at all times.


MAIN RESPONSIBILITIES:

  • Set up the main pot wash kitchen i.e. bins, trays, floor mats, grease trap.
  • Clean deep fat fryer, replacing the oil if needed
  • Begin bringing up the and putting away deliveries
  • When on deliveries all stock to be rotated, placed in a suitable container & in correct place in the fridge. Food use bye date, time of delivery & delivery temperature to be recorded on the invoice.
  • Basic preparation of vegetables/meat/fish, which should then be labelled and dated put in the fridge and the stock rotated
  • Kitchen to be kept free of pots and rubbish throughout the day
  • Whenever needed the floor should be swept/mopped ie. Droppage/spillage
  • On top of this the floor is to be swept 3 times daily(single) 4 times(double) Times 11am, 3pm, 5pm & 9pm double
  • Rubbish to be taken out from the kitchen at the times above, plus throughout the morning until 10am
  • Potwash to be as empty as possible & kitchen trays completely empty by 11.30 to be ready for service at 11.45am

During service time:-

  • Trays/pans to be cleaned & returned to cooker
  • Plates, cups, cutlery to be cleaned & given to pass waiter
  • Water in the spoon containers changed frequently
  • Hot water top ups when required
  • To have buckets of soapy water x2 & cold water x1 ready for 3pm for chefs to be able to clean down
  • To ensure that the daily, weekly & monthly cleaning schedule is followed and signed, however there can also be cleaning done!
  • On a single kitchen to be kept clean & tidy so ensuring that once the chefs leave you are able to finish within around an hour
  • On a double kitchen kept clean & tidy & ensure that (point 9) is ready for 5.15pm for evening service
  • To wear the correct uniform
  • To ensure all security requirements for Searcys are upheld.
