Kitchen Head of Production - Westbourne Grove, London

Job Title: Head of Production, Central Kitchen

Job Purpose: To lead the Central Kitchen team ensuring that food is produced on time and ready for delivery to stores. Ensure orders are received on time for stores and in turn order stock and conducting stock takes on a regular basis.

Principal Accountabilities

Operations

  • Upscaling new recipes for new menus
  • Ensuring food is produced on time for stores and is of good quality and consistency.
  • Educate other FTG teams in how best to prepare and sell hot and cold serve over food
  • To ensure the team achieves its departmental targets and objectives
  • Organise rotas for the WG kitchen department using appropriate I.T systems
  • Understand the commercial implication of each recipe

Customer Service Standards

  • Regarding stores as your internal customer and therefore receiving and acting on any feedback given.
  • Report that feedback to Executive chef 

People, Training & Development

  • Leading and motivating the team to produce good quality food
  • Effectively communicate goals and objectives to the team
  • Completing probation reviews and appraisals as required
  • Give regular feedback regarding performance and conduct
  • Attend relevant training

Merchandising & Stock Management

  • Ensure departmental ordering is completed
  • Ensure proper stock management; that this is monitored weekly and that wastage is minimised and food cost at budgeted level 
  • Departmental stock takes: ensure stock takes are completed and recorded according to company procedures

Systems & Procedures

  • Follow correct opening and closing procedures
  • Ensure the team operates equipment correctly and safely 
  • Ensure Planet Organic recipes are followed
  • Ensure HACCP, Health & Safety and Soil Association procedures are adhered to and properly recorded; this includes temperature checks, cleanliness, hygiene, Soil Association log sheet
  • Maintain kitchen standards: ensure that every team member clearly understands and adheres to food hygiene and food safety measures.

Additional Duties

  • Any other additional tasks that may be required

Skill requirements

  • Experience of working as a chef operating multi-sites
  • A good understanding of healthy eating and the health benefits of different foods
  • An understanding of creating gluten/dairy free/ vegan  dishes
  • Management of a team of people
