Senior Sous Chef

Old Thorns is a four-star hotel resort in Hampshire. The hotel is easily accessible from the A3, and only 30 minutes from the M25 and Portsmouth. Old Thorns offers luxury accommodation, conference & function facilities, health club, beauty spa, restaurants & bars and a championship golf course.    

We are seeking a Senior Sous Chef to assist with the management of the kitchens and ensure high standards of food preparation and presentation.  You will help to lead, develop and motivate the team, ensure that the companies high standards are delivered and that budgeted profitability is achieved.   
 

Main Responsibilities:

• Ensuring the smooth running of the kitchen on a day to day basis
• Ensuring that all food stuffs are stored correctly and stocks are rotated in line with the food hygiene regulations
• Controlling quality of food and ensure food wastage is kept to a minimum
• Ensuring that any faults or damage to equipment is reported as soon as possible
• Ensuring temperature and delivery checks are carried out and recorded
• Assisting in product development and to positively approach sales opportunities in order to maximize revenue to meet and exceed budget sales
• Assisting with the recruitment, training and development of staff
• Ensuring the Kitchen complies with statutory and legal requirements for fire, health & safety, hygiene and food safety

 Knowledge/Skills & Experience Required

• Have previous experience within a similar role leading a busy kitchen
• Be passionate about delivering quality food and excellent customer service
• The ability to lead and motivate a team
• Be efficient, organised and have good communication skills 
• Hold an NVQ Level 2 in Food Preparation and Food Safety in Catering Certification
• A sound understanding of food hygiene

This is a full time position, 5 days per week Monday to Sunday on a rota basis. 

Live in accommodation may be available.
