Chef de Partie - The Highwayman, Carnforth

A competent chef, you must be capable of contributing across all sections in a kitchen that produces quality high volume food.

Organisation Relationships
Reports to: Head Chef / Sous Chef
Co-Ordinates with: Colleagues in the Kitchen and other employees within Ribble Valley Inns and Northcote Group.

PRIMARY OBJECTIVE(S)

  • To consistently ensure the kitchen develop, provide and maintain a standard of cuisine of the highest order.
  • To support the Management in a proactive way, ensuring a smooth successful running of the kitchen.
  • To ensure that the areas of the kitchen in which you work meets with all Health, Safety and hygiene standards.

SPECIFIC RESPONSIBILITIES:

  • To be fully conversant with the companies aims and objectives and to play a proactive role in their achievements.
  • To ensure a clear knowledge of all the dishes on the main and special menu at all times.
  • To aid the Head Chef to consistently develop, provide and maintain a standard of cuisine of the highest order from your section.
  •  Including menu development and design
  •  Ensuring quality of output at all times
  •  Ensuring effective profit margins of all menus.
  • To aid the Head Chef in managing the total running of the kitchen including:
  •  Ensuring quality control is of the highest standard.
  •  To provide cost effective buying and use of kitchen goods.
  •  To manage and maintain high standards and cost effective stock control.
  • To ensure that the areas in which you work are kept clean, tidy and hygienic at all times.
  • To ensure that you work safely, ensuring both the safety of yourselves and your colleagues.
  • To ensure that you are fully prepared for service 15 minutes before service time and to help others should they need assistance.
  • To help in the training, development and supervision of the apprentice chefs when in your care.
  • To deal with colleagues openly and fairly at all times and promote mutual respect within the team.
  • To assist in any other duties as directed by the Managing Directors.
  • To ensure professional confidentiality at all times.
