Sous Chef

Lythe Hill is an historic Country House Hotel, set in 20 acres of woodland on the slopes of the Surrey/Sussex Hills and is located on the outskirts of the market town of Haslemere. Lythe Hill offers luxury accommodation, Spa, Gym, Restaurant and private dining rooms and is a popular venue for weddings and events. 

We are seeking an experienced Sous Chef to work closely with our Head Chef to oversee the kitchen and ensure high standards of food preparation and presentation.  You will help to lead and motivate the team, ensure that the companies high standards are delivered and that budgeted profitability is achieved.   

Main Responsibilities:

• Ensuring the smooth running of the kitchen on a day to day basis
• Ensuring that all food stuffs are stored correctly and stocks are rotated in line with the food hygiene regulations
• Controlling quality of food and ensure food wastage is kept to a minimum
• Ensuring that any faults or damage to equipment is reported as soon as possible
• Ensuring temperature and delivery checks are carried out and recorded
• Assisting in product development and to positively approach sales opportunities in order to maximize revenue to meet and exceed budget sales
• Ensuring the Kitchen complies with statutory and legal requirements for fire, health & safety, hygiene and food safety  

Knowledge,Skills & Experience:

• Have a previous experience leading a busy kitchen
• Have experience within a banqueting operation
• Be passionate about delivering quality food and excellent customer service
• Be efficient, organised and have excellent planning and communication skills
• Hold an NVQ Level 3 in Food Preparation and Food Safety in Catering Certification
• Be efficient, organised and have a flexible and adaptable attitude
