We have a fantastic opportunity for a knowledgeable and innovative Head Sommelier to join an amazing property that takes pride in the food and beverage offering.

The Head Sommelier will be responsible for training and developing the Assistant Sommelier and be required to work with the Restaurant Manager to train the Food and Beverage team to ensure they have the wine knowledge required to operate at this high standard.

‘Restaurant Hywel Jones’ is currently open Wednesday to Sunday evenings and Sunday lunch, we also host private dinners, celebration evenings and weddings throughout the year.  We are looking for a dynamic Head Sommelier who is innovative and would be proactive in suggesting and implementing ideas in order to improve the wine offering across the property.  

Skills and experience required:

• Experience as a Sommelier in a comparable standard establishment
• Cellar management
• Ability to manage a wine list of 300+ bins
• Demonstrate extensive wine knowledge
• Ability to train small groups
• Blind tasting/masterclass experience (advantage)

• Knowledge of Licensing Laws, weights and measures – Personal Licence would be an advantage
• Ability to communicate with colleagues and guests in a professional manner
• Fluent in English – written and verbal
• Well presented
• Team player
• Passionate about guest service
• Remain calm under pressure and respond to guest’s requests in a timely and professional manner
• Awareness of the local market/competitors

We are offering a competitive salary plus service charge and a bonus scheme for achieving set targets.  This is a full time role, working 48 hours over 5 days including evenings, weekends and Bank/Public Holidays. Due to the location of the property it is advisable to have your own transport to enable you to be able to fulfil the shifts required for this role.
