Job Responsibilities and Duties

  • To ensure that all stocks are kept under optimum conditions
  • To ensure that all mise-en-place (MEP) is always freshly prepared and on time
  • To ensure that all dishes are being prepared to the correct recipe and to the correct quantity
  • To ensure that all dishes reach the hotplate or pass correctly garnished, the correct portion and size, presented on the correct serving dish in the prescribed manner
  • To ensure that his/her section is kept clean and tidy at all times
  • To ensure that junior chefs and trainees receive the right training & optimum guidance
  • To ensure that any anticipated shortages are communicated promptly to the Sous Chef or Head Chef
  • To ensure that no horseplay is allowed in his/her section and that all staff under his/her control are treated fairly, with respect and courtesy
  • To deputise in the sous chef’s absence and take charge of the kitchen when directed to do so
  • To attend training courses and seminars as and when required
  • To strive to study management subjects in preparation for future advancement

Job Descriptions

These are the basics of being a Chef de Partie

  • A chef de partie (CDP) is responsible for running a specific section of the kitchen, and possibly managing a small team of workers. You will be required to ensure that your team are organised so that the food goes out on time and as intended by the Head Chef. Your work area must be clean and tidy at all times.
  • This position is not an entry level position in the kitchen and as such you will be required to give input when required during tastings and menu planning.
  • You must be knowledgeable about all of the dishes on your section and all culinary functions in general
  • You must be organised and comfortable working in a high pressure environment, keeping cool under pressure
  • You must be able to give orders to any members in your team and be able to receive and follow orders handed down to you by senior kitchen and restaurant staff

Primary Role

Your primary role is:

  • To oversee the preparation, cooking & presentation of meals in the restaurant
  • Directing chefs in your section in preparing, cooking & presenting dishes as required by the Head Chef or Sous Chef
  • Enforcing strict health and hygiene standards in the kitchen
  • Troubleshooting any problems or issues that may arise on a day to day basis
