Twenty-eight years ago, in a sunny little corner store in Sydney, the global phenomenon of avocado toast and ricotta hotcakes began. Self-taught Aussie cook and former art student Bill Granger opened his first café, serving simple fresh flavours and lazy weekend breakfasts at a friendly communal table. Since then, he’s been crowned ‘the egg master of Sydney’ and the ricotta hotcakes are ‘Sydney’s most iconic dish’. After decades of culinary creativity, and with eighteen restaurants in London, Sydney, Seoul and Tokyo, the plates and flavours are more sophisticated, but the sunny warmth of the atmosphere and joy of eating will never change.
