Bread and butter is our bread and butter. We're known for our Sourdough and continue to provide customers with high quality bread that can be enjoyed at home. We bake by hand with natural ingredients, and whilst we are ordinary people, we want to make extraordinary things. We want to play our part in bringing humanity back into the food we eat, back to local communities.

SUPPORTING NEIGHBOURHOOD COMMUNITIES

We believe in the power of community, in helping those around us and living as sustainably as possible.

We do our best to manage what we make, but inevitably sometimes we do have surplus food at the end of the day. We believe that any surplus food should go on to feed people within our communities. We make this happen by donating food left at the end of our days to local organisations and charities, from all of our bakeries. We currently support 95 local organisations. Our aim is to ensure that any surplus goes to local charitable causes 100% of the time.

INSIDE OUR BAKERIES

Since 2005, one thing that remains consistent across our developments, is that each bakery is completely unique. Our Property Team are meticulous in ensuring that the integrity of our buildings are respected and that we re-purpose furniture, materials over manmade ones and celebrate the history of the buildings we now proudly call GAIL's. From the neon pink walls of Finsbury Park to the what-used-to-be-banks at East Sheen and Wanstead, no two bakeries are the same.

SUSTAINABLE BAKING

Our 'Waste Not Range' reuses offcuts from a variety of our products that would otherwise go to waste. We take care in supplying our customers with the best ingredients so it's only right that they are utilised in as many ways as possible to become new creations. Unsold, surplus croissants are filled with a  rich b├ęchamel sauce, Hepburn's ham and Lincolnshire Poacher cheese, while croissant dough off cuts are reimagined as our popular Soho Buns. Our Waste-less sourdough, which has been awarded the Great Taste Award is made from yesterday's surplus bread.
