A rare opportunity has arisen for an experienced and creative Head Chef to join our established and welcoming team in the Forest Brasserie as Brasserie Head Chef. The Forest Brasserie is a relaxed dining venue located within the Country Club with stunning views over the golf course and Ashdown Forest, celebrating locally sourced produce. An open kitchen to the Brasserie adds to the relaxed atmosphere and gives the team the opportunity to interact with our guests and create a sense of theatre.

As Brasserie Head Chef you will be responsible for the management, running and direction of the Brasserie kitchen reporting to the Executive Head Chef. This is a hands on role and therefore will be an active part of the hotel operation with the ability to lead by example.

You will be responsible for delivering the food in keeping with the ethos and style of the hotel and maintain a consistency of food quality and presentation at the highest level. You will be given the opportunity to set and maintain the principles and standards of the kitchen operation.

Attributes/Experience:

  • Proven experience within a similar role.
  • An excellent track record in kitchen management.
  • Proven track record of delivering consistent food GP
  • Advanced Food Safety Certificate. 
  • Complete confidence with changing EHO legislation and the ability to maintain standards of hygiene, stock rotation and organisation.
  • A good working knowledge of cooking trends and best practices.
  • Excellent communication and leadership skills
