Our internationally acclaimed Taiwanese Brand, Din Tai Fung will be opening its inaugural restaurant in the UK in London in 2018, and we looking for talented individuals to join us in launching our amazing restaurant..

As a Sous Chef, you will join a dedicated team of chefs in the Dim Sum Kitchen, serving up world famous Taiwanese signature dishes.

Our Sous Chef will work alongside the other senior chefs to manage the daily kitchen activities, including overseeing the team, aiding with menu preparation, ensuring food quality and freshness, and monitoring ordering and stocking.

Job Responsibilities:

  • Leading the kitchen team in Executive Sous chef or Head Chef's absence
  • Providing guidance and training to junior kitchen team members, including, but not limited, to dumpling folding, food preparation, and dish plating
  • Overseeing and organising kitchen stock
  • Ensuring a first-in, first-out food rotation system and verifying all food products are properly dated and organised for quality assurance
  • Keeping workstations stocked and clean, especially before and during prime operation hours
  • Hiring and training new kitchen employees to restaurant and kitchen standards
  • Managing food and product ordering by keeping detailed records and minimises waste, plus working with existing systems to improve waste reduction and manage budgetary concerns
  • Supervising all food preparation and presentation to ensure quality and restaurant standards
  • Working with the Executive Sous chef to maintain kitchen organisation, and the team's training and development
  • Verifying that food storage units all meet standards and are consistently well-managed
  • Assisting the Executive Sous chef with new dish creation
  • Coordinating with the restaurant management team on supply ordering, budget, and kitchen efficiency and staffing as well as front of house staff training.

Sous Chef Qualifications:

  • Experience in similar role
  • Food Safety Level 2 and/or Level 3

  • Comfortable in working in an open concept kitchen
  • High level of personal hygiene
  • Strong organizstional skills and a high attention to detail
  • Team player
  • Self-motivated
  • Knowledge in Restaurant Regulations
  • Bilingual in English and Mandarin is a bonus
