To manage a clean & efficient kitchen to produce 5 star quality food and deliver operational excellence to maximise business profit
- Create bespoke menus for events such as a grand gala dinners, weddings, private functions and receptions
- Arrange and organise all VIP and special requests when necessary
- Have a flexible ability to respond to business and client needs
- Guide team members to prepare & cook high quality food to ensure guest satisfaction
- Manage all hotel food costs & recipe costing & conduct activities to drive business profit
- Oversee the planning & appropriate ordering of stock for anticipated levels of business
- Ensure effective stock rotation & food utilisation across the hot and cold production kitchens teams to ensure minimum waste
- Manage food allergens inline for food safety law and company polices, to include storage, labelling, allergen matrix, production and service.
- Operate & maintain kitchen apparatus to ensure 24/7 effective kitchen operation & compliance with H&S legislation
- To run an environment that is clean, tidy and well organised at all times.
To mobilize & inspire kitchen colleagues and build high performing teams in order to achieve business goals & service standards
- Drive innovation, identify & resolve issues to improve standards in Hotel kitchen
- Mentor, train & coach team members
- Give full understanding and guidance to a colleague requiring assistance in a difficult situation, using a caring and supporting manner.
- Assist in the induction & succession planning of staff
- Monitor & evaluate kitchen team performance and identify training needs
- Follow and abide by all regulations, policies and procedures that has been set out by Coworth Park Hotel and the Dorchester Collection.
- Comply with all statutory and company health & safety, fire, bomb and security regulations
- Ensure job required certificates and licensing is kept up to date
To ensure inspirational communication with guests, suppliers & colleagues
- To work across departmental boundaries & partner with colleagues to harmonize Hotel procedures & share knowledge
- To attend and conduct meetings as required to ensure smooth running of operation and also liaise with all other departments for any specials needs, requirements
- To ensure you are flexible to the needs of the hotel
- Along with your main duties you may be asked to complete other tasks and duties as and when necessary and reasonably required

- Previous experience in a similar establishment
- Food, hygiene and safety
