Junior Sous Chef - Cameron Grill and Claret Jug, Alexandria

We currently have the opportunity to add a full time Junior Sous Chef to our established teams in both our Cameron Grill Restaurant and The Claret Jug Restaurant.

The Claret Jug Restaurant at Cameron House Resort is situated 2.5 miles along from the main hotel and set alongside our 18 hole championship Golf course and award winning Spa this is a highly versatile restaurant which caters informally to our many Golfers and Resort visitors during the day and transforms to a popular high quality casual dining choice for our Hotel guests and visitors in the evening. The Claret Jug is open for breakfast lunch and dinner and will have seasonally high volume. Working within the Claret Jug kitchen, you will cater for the Restaurant as well as the Café Spa so can be facilitating anything from afternoon teas to high profile- high volume functions. 

The second opportunity is within our newly refurbished Cameron Grill. Our Cameron Grill Restaurant has been awarded 2 AA Rosettes, therefore a great environment to further your skills and career. There is plenty to keep our kitchen brigade busy- producing great food for our hotel lounge, restaurant and room service, as well as our events and wedding business. The Grill kitchen regularly oversees breakfast for 300 covers, Lunch in our Great Scots Bar and dinner for over 150 covers.

Cameron Grill/ Claret Jug Restaurant

£18,000- £20,000  per annum

As Junior Sous Chef your primary job is to bridge the communications between the Kitchen sections and the Head chef/ Sous Chef to ensure the smooth and efficient delivery of service. You should be highly motivated and possess excellent communication and organisational skills. The Kitchens within our busy outlets at Cameron House can be a highly pressurised environment- as Junior Sous Chef you should have the ability to remain calm and focused under pressure whilst consistently meeting the high standards required. You should maintain a good overview of kitchen activity and have the ability to make changes when required to ensure the kitchen is running at maximum efficiency.

As Junior Sous Chef you will be expected to use your skills and experience to coach and develop our new and existing kitchen team members to achieve their full potential, in turn you will have the opportunity to build on your own skills and continue your learning whilst working in a world renowned five star Resort.

Junior Sous Chef daily responsibilities will include (but not limited to) the following;

  • Support the Sous/ Chef/Head Chef in planning ahead and anticipating business needs
  • Assist in completing staff rota’s in accordance with forecasted business when necessary
  • Liaising with the restaurant department to ensure a thorough knowledge of the menus and to then ensure the team are thoroughly briefed
  • Build a good relationship with restaurant and Kitchen staff
  • Ensuring departmental SOP Manuals are in place, adhered to and regularly updated
  • To ensure all food leaving the kitchen is to the agreed standards and temperature
  • Delegating responsibility to your team when applicable
  • Be responsible for ordering and checking the stock / produce required for your Kitchen – We currently use an online ordering system so an understanding of computers is necessary.
  • Maintain a safe and hygienic kitchen environment and ensuring that Health and Safety Practices are adhered to

Skills / Experience / Qualifications Required

  • Currently working as a Junior Sous Chef or experienced Chef De Partie looking for your next challenge
  • Good literacy and numeracy skills
  • Good level of business acumen
  • Proven track record as a successful supervisor in a similar role
  • NVQ level 3 or similar level qualification preferred
  • Level 2 Food Hygiene qualified preferred
  • Excellent working knowledge of Health and Safety
  • Determined and Enthusiastic
