Responsible For: Food and Beverage Assistants / Food and Beverage Casuals

Location: The Melbourne Club & Brocket Hall

General Scope and Purpose

To assist the Food & Beverage Team in the smooth running and efficient operation of the Watershyppes Restaurant, Bar and Patio and Oak Room. To work alongside the team and enable all employees under your control to consistently achieve product and hospitality service standards and to always deliver a high degree of customer/guest care.

The Food & Beverage Supervisor must assist with the continued smooth running of the department in the absence of the Manager, including covering shifts on reception when required.

Departmental Control

  • To work with and supervise the activities of the department ensuring that high standards of service are maintained and that the requirements of our guests are met and exceeded
  • To ensure all team members are allocated tasks and that they are fully utilised. Ensuring the Restaurant/Bar/Patio/Oak Room are set and serviced to the required standard
  • To keep yourself informed of the Golf Club’s goals and objectives, including those of other departments
  • To assist with the control of department operating costs in line with forecasted business paying attention to stock levels throughout the department
  • To liase with the kitchen and provide the link between kitchen and service staff when required
  • To play a role in the running of the beverage operation. Assisting with the ordering of beverages for the Clubhouse, the in-put and maintenance of the Beverage Control System and monthly stock & ensuring that all relevant paperwork is completed, revenue is correctly allocated, and stock levels are controlled in line with company procedures. Ensure weekly line cleaning carried out to adhere to ‘Best Practise’ and following H & S guidelines
  • Maintain strong working relationships with our beverage suppliers/account managers
  • To ensure all department operations comply with the statutory and legal requirements for fire, Health and Safety, hygiene, licensing, entertainment, and employment law
  • To deliver the company products and departmental service standards in line with the Standard Operational Procedure (SOP) and company guidelines. Ensuring high standards are continually met in all aspects of the department and thus meeting, whilst aiming to exceed, customer expectations at every opportunity. Develop the SOPs in conjunction with the Clubhouse Manager
  • To ‘meet and greet’ members, guests and visitors and ensure they receive the service they require to the standards expected by the Company
  • To work with the Clubhouse team to assist in maximising business opportunities
  • To liase with Reception and Accounts to ensure the accurate production of Member account charges and guests bills and assisting with any queries which may arise
  • To monitor and control the reservations process used in the Watershyppes Restaurant
  • Monitor housekeeping and maintenance issues throughout the department and communicate any problems areas to the relevant departments
  • Deal effectively with complaints and comments from all Members and guests and communicate these issues as necessary. Record and utilise feedback to its full potential.
  • To take an active role in the organisation and execution of Clubhouse Social Events.

Growing The Business

  • To positively approach sales opportunities in order to maximise sales revenue within the department
  • To ensure all department staff are sales focused
  • To ensure the consistent delivery of excellent customer service within the department
  • To assist the manager in ensuring guest satisfaction at every opportunity in order to secure repeat business and further enhance the reputation of the Estate

Team Management

  • To help create a team environment which promotes good employee morale and an ethos of commitment and pride in the department and the services it provides
  • To ensure effective communication within the team by holding briefing sessions and attending meetings when required
  • To assist with the training and development within the department and ensure this is carried out in a systematic and professional way in order to meet the demands of the business. To ensure training is recorded

Other

  • To be aware of and strictly adhere to fire procedure precautions and bomb threat procedures as laid down by the company
  • To attend training when required
  • To set an example to all other team members through the way that you work and the way you conduct yourself whilst completing your work, making full use of the time available to you
  • To always promote and represent the company in a mature and professional manner.

Candidate Profile

Qualifications

  • Must hold current Level 2 Food Safety in Catering Certificate.
  • Personal Licence holder desirable.
  • Good standard of education.

Work Related Experience

  • Minimum of 2 years in a Food & Beverage supervisory role – preferably in a five-star establishment.
  • Fine dining experience preferred.
  • Bar service experience essential.
  • Basic knowledge of wine essential.
  • Previous training preferred.

  • Excellent spoken English
  • Ability to communicate effectively is imperative.
  • Must have a desire to generate customer satisfaction.
  • Immaculate personal appearance is required.
  • Ability to work in a pressurised environment.
  • A confident and professional approach is essential.
