Food & Beverage Assistant - Welwyn, Hertfordshire

Profile                  

The Auberge du Lac restaurant overlooks the Broadwater with stunning views of Brocket Hall and its two championship golf courses.  The main restaurant offers superb international cuisine, with fine wines from our extensive cellar.  There are also four private dining rooms created to reflect the mood of the occasion, where guests can enjoy their chosen menu.

The Auberge du Lac is a unique showcase for a classic dining experience, offering formality and elegance with immaculate service.

Job Purpose         

To ensure the highest standards within the allocated area of work and to present and serve all food and beverage items from the menus and tariffs as directed by the line manager.  Responsible for ensuring and maintaining the cleanliness of workplace area.  To actively promote the restaurant and its products.

Job Tasks             

  • To always be punctual for work ensuring that you are correctly dressed in your uniform ready for work;
  • To help and assist within all areas of Auberge du Lac and Brocket Hall Estate as required;
  • To ensure stillroom is always in a presentable manner.
  •  All silver, crockery and equipment is kept polished and in good order;
  • To ensure that all the correct mis-en-place is in place for each service, to the levels of the business;
  • To assist in carrying out the day to day service to guests, ensuring standards are met and surpassed. 
  • To be polite and courteous at all times;
  • To communicate with your fellow colleagues within the department, ensuring product knowledge and awareness throughout, promoting teamwork;
  • Ensure requisition as required, of relevant stocks of equipment, dry goods as per business levels;
  • To liaise with all your colleagues on a daily basis, both front and back of house;
  • To have a basic knowledge of the products and services offered in the restaurant ensure that all breakages to equipment and furnishings are reported and recorded;
  • Ensure the highest levels of hygiene and best work practices are maintained;
  • Must be fully up to date on all aspects of liquor licensing regulations as well as food hygiene and employment laws relevant to this position;
  • To be aware of the need to observe Health & Safety at work, and advise accordingly of any irregularities;
  • Assist in the preparation of stocktaking of operating equipment or supplies within the outlet when required;
  • Participate in wine tastings;
  • Participate in training courses as required;
  • Cross-exposure training when required.

Candidate Profile Work Related Experience

  • Experience in a restaurant of similar standard;
  • A knowledge of culinary French is essential;
  • A knowledge of classic and modern cuisine & wines;
  • Knowledge of condiments and accompaniments.

Personal Qualities

The ability to communicate effectively is imperative, and this must include:

  • With kitchen, back of house and other Estate departments;
  • With clients, guests, business contacts and general public;
  • Verbally and in writing, in English.
