Los Mochis City is seeking a highly skilled, creative and ambitious Junior Sous Chef to join our flagship team in Los Mochis City, a stunning 14,000 sq ft restaurant on the rooftop of 100 Liverpool Street.
Located on the 9th floor of 100 Liverpool Street, the restaurant boasts a 3,000 sq ft outdoor terrace with views of the City. Los Mochis City is our our second location in London following the opening of the highly acclaimed Los Mochis Notting Hill.
From Tokyo to Tulum, Los Mochis restaurant is the global pioneer of pairing Mexican & Japanese cuisines, showing off the vibrancy, passion, and heat of Mexico whilst celebrating the cool elegance and precision of Japan.

As a Junior Sous Chef, you will support the Management team with all aspects of the department, including menu development, production, and maintaining the highest standards of quality and presentation. This leadership role requires exceptional culinary expertise, strong management skills, and a passion for creating exquisite pastries.

Responsibilities
- Control and direct the food preparation process and any other related activities
- Approve and "polish" dishes before they reach the customer
- Plan orders of equipment or ingredients according to identified shortages
- Arrange for repairs when necessary
- Remedy any problems or defects
- Be fully in charge of hiring, managing and training kitchen staff
- Oversee the work of subordinates
- Estimate staff's workload and compensations
- Maintain records of payroll and attendance
- Comply with nutrition and sanitation regulations and safety standards
- Foster a climate of cooperation and respect between co-workers
Requirements
- Proven experience in a Junior Sous Role or Senior Chef de Partie.
- Previous experience with Japanese cuisine
- Exceptional proven ability of kitchen management
- Ability in dividing responsibilities and monitoring progress
- Outstanding communication and leadership skills
- Up-to-date with culinary trends and optimized kitchen processes
- Good understanding of useful computer programs (MS Office, restaurant management software, POS)
- Credentials in health and safety training
- Degree in Culinary science or related certificate
