ABOUT THE ROLE

As Head Baker you will lead a skilled team in crafting award-winning organic breads and viennoiserie, maintaining Daylesford Organic's renowned quality standards. Reporting to the Executive Baker, you will oversee production, manage scheduling, and ensure compliance with food safety and quality standards such as SALSA and the Soil Association. You'll play a key role in fostering innovation, driving continuous improvement, and meeting financial targets. With a focus on operational efficiency, team development, and customer satisfaction, this role ensures the seamless delivery of exceptional products to our Farm Shops, cafes, pubs, and hotels.

HOURS: Full Time 45 Hours

RESPONSIBILITIES

Reports to: Executive Baker
FOOD

  • Lead a team of night-shift Bakers in producing a range of organic breads and viennoiserie for supply to our Farm Shops, as well as their integrated cafes and the Bamford Collection's pubs/hotels, across 7 days a week
  • Hold responsibility for maintaining the award-winning quality of Daylesford Organic breads and viennoiserie
  • Implement a continuous improvement mindset and work with the Executive Baker to propose and develop new products that deliver exciting innovation to our customers (according to agreed timelines)
  • Support the Executive Baker in the implementation of processes for food safety and traceability in line with the Daylesford Quality Management System (and the standards laid out by SALSA and the Soil Association)


OPERATIONS

  • Allocate personnel according to the needs of the business and communicate rotas to the team with sufficient notice
  • Actively participate in annual HACCP reviews
  • Ensure cleaning rotas are adhered to at all times
  • Maintain a safe workplace for both staff and visitors, ensuring we are fully compliant with Health & Safety regulations
  • Comply with the standards laid out by our own Technical Team, as well as external consultants/auditors, highlighting and rectifying food safety issues where they present themselves


NUMBERS

  • Manage daily recipes, stock counting and production records for financial accuracy
  • Ensure the fulfilment of orders at a rate of more than 98%, through careful scheduling, staffing and raw material stock management
  • Ensure the night-shift Bakers carry out all bread and viennoiserie production duties with care and diligence to limit wastage
  • Aid the Executive Baker in achieving the Bakery's financial (EBITDA) targets via careful cost management

PEOPLE

  • Line-manage, develop and motivate the night-shift Bakers
    Complete all People admin and processes for the team in a timely manner
    Develop, train and coach your team through performance review and personalised learning & development
    Ensure staff complete all necessary mandatory training
    Alongside the Executive Baker, be forthcoming in proposing and implementing equipment/process/staffing changes that support greater efficiency
