Our mission at Flat Iron is to make remarkable steak accessible to all. Not just that, we also try to look after all our guests as if they were old friends. Everyone is welcome. To do that, we have an amazing team of great people who love what they do and love working at Flat Iron. We have a butchery in our Covent Garden restaurant that cuts carcass beef from our own herd in Yorkshire and other carefully chosen suppliers across the UK. The butchery operates 5 days per week including weekends and evenings and we are happy to consider an aspiring young talent.



We're looking for:

  • Experienced Butcher: Expertise in butchering whole carcasses
  • Great Communication: Ability to communicate with team members, suppliers, and guests, including conducting training sessions and demos.
  • Organisational Skills: Strong ability to manage multiple tasks, maintain records.
  • Attention to Detail: Precision in cutting, record-keeping, and compliance with health and safety standards.
  • Adaptability: Flexibility to assist in various events and adapt to the dynamic needs of the restaurant.
  • Passion for Quality: Commitment to maintaining high standards in meat quality and overall service.

Here's what you'll get up to:

  • Quality and Supplier Coordination: Monthly coordination with the head of beef/meat to ensure quality, pricing, and explore new suppliers.
  • Butchery Demonstrations: Engage guests with live butchery demos during peak hours (12-2pm and 6-9pm).
  • Staff Training: Conduct training sessions for GMs of other restaurants and group head chef, and provide training for both FOH and BOH teams.
  • Specials Preparation: Work with the head chef to determine weekly cuts, ensuring proper portioning and communication with FOH.
  • Event Assistance: Support Flat Iron events and supplier training sessions.

Administrative Duties:

  • Record-Keeping: Maintain records of deliveries, tasting notes, and process invoices with the Head Chef.
  • Stock Management: Conduct weekly stock counts and verify invoices.
  • Compliance: Perform temperature checks and maintain cleaning checklists.
  • Ordering and Transfers: Manage sundries orders and transfer sheets for deliveries to other restaurants.
