About the Job:

An opportunity has arisen for a Pastry Junior Sous Chef to join us at The Carlton Tower Jumeirah. The main duties and responsibilities of this role are:

  • Assist the Executive Pastry Chef and Pastry Sous Chef in planning and organizing the daily operations of the pastry kitchen to meet the high standards of the luxury hotel.
  • Supervise and train pastry team members, ensuring adherence to recipes, techniques, and presentation standards.
  • Participate in the creation and development of pastry menus, including desserts, breads, pastries, and confections, reflecting seasonal ingredients and culinary trends.
  • Oversee the production and preparation of pastry items, ensuring consistency, quality, and timely delivery for all outlets, banquets, and special events.
  • Monitor inventory levels of pastry ingredients and supplies, collaborating with the procurement team to ensure sufficient stock while minimizing waste and controlling costs.
  • Maintain a clean, organized, and sanitary pastry kitchen environment, adhering to health and safety regulations and implementing proper sanitation practices.
  • Assist in scheduling pastry team members and managing labor costs to ensure appropriate staffing levels while maintaining productivity and efficiency.
  • Collaborate with other kitchen departments, such as the main kitchen and banquet kitchen, to coordinate production schedules and facilitate smooth workflow.
  • Assist in the development and implementation of standard operating procedures and production guidelines to streamline processes and improve consistency.

About you:

The ideal candidate for this position will have the following experience and qualifications:

  • Strong knowledge of pastry ingredients, techniques, and equipment, with the ability to execute a wide range of pastry items including desserts, breads, and pastries.
  • Proven leadership and supervisory skills, with experience in training, mentoring, and motivating pastry team members to achieve excellence in performance and service.
  • Familiarity with health and safety regulations and sanitation standards in a kitchen environment, with a commitment to maintaining cleanliness and hygiene at all times.
  • Creative flair and passion for pastry, demonstrated through a portfolio of innovative and visually appealing pastry creations, as well as a willingness to contribute to menu development and culinary innovation.
  • Experience working in a fast-paced kitchen environment, with the ability to multitask, prioritize workload, and maintain composure under pressure to meet tight deadlines.
  • Familiarity with pastry costing, portion control, and inventory management practices to support cost-effective operations and maximize profitability.
  • Strong communication and teamwork skills, with the ability to collaborate effectively with other kitchen departments and communicate instructions clearly to pastry team members.
