Regional Culinary Lead - Chessington, London

Aramark UK is currently recruiting a Regional Culinary Lead to join the UK business specifically aligned to our Merlin Entertainments contract. Reporting to our Merlin Head of Culinary, your primary responsibility will be to work closely with the ops teams to deliver higher quality food consistency, culinary support through experience and guidance, improved food safety, and team development.

Your role will involve being ‘in the moment’ and working alongside the business to observe, mentor, coach and direct teams to a higher level of performance. This will require leadership and direction to be given to ‘on Resort’ culinary teams to increase quality, efficiency and improved outcomes. It will require involvement and engagement with multiple key stakeholders working collaboratively to deliver the objectives.

A day in the life of a Regional Culinary Lead

  • Ensuring quality and consistency of offer is delivered across resorts
  • Planning, training and execution of new food and beverage offers developed by the culinary team on Park, and supporting Resort Executive Chefs in hotels
  • Support in the creation and delivery of Standard Operating Processes where necessary.
  • Producing training and operational materials/ aids for new and existing team members in all food outlets.
  • Auditing the resorts to ensure standards/ portion controls are followed and retraining teams if required.
  • Reviewing ordering procedures to ensure we are remaining as compliant as possible and not deviating unnecessarily from agreed purchasing protocols
  • Have a strong understanding of the financial implications of food costs and associated Gross Profit ratios
  • Carry out stock and margin investigations with or on behalf of business excellence team
  • Constantly looking to drive labour and margin savings through introducing new process’s and equipment signed off by culinary team
  • Highlighting to the RD’s and SLT shortfalls in standards by walking the customer journey and holding team members to account.
  • Provide leadership and advice to the onsite culinary leads in all capacities which articulates a clear and compelling vision of our culinary objectives.
  • Work closely with the Resort Directors to ensure best possible support is being deployed to the location
  • Engaging with feedback to Senior stakeholders when required
  • Attend periodic meetings with the wider culinary division to support the wider Chef ‘family’
  • Driving company food safety/health and safety standards across all outlets.
  • Supporting the operations to ensure all Aramark Corporation procedural paperwork is understood and accurately completed

You’ll be set up for success if you have:

  • Experience of working at a senior level for 5 years, ideally in a branded restaurant environment
  • Experience of working in a multi-site operation at a position of Area management or Operational Chef
  • Have a strong understanding of food safety and back of house management
  • And a passion for training low skilled food service teams and bringing on the next generation of young cooks/chefs
  • Excellent people management skills with an eye for talent
  • The ability to effectively communicate and influence in a considerate and respectful manner
  • The ability to motivate others who may be afraid of change
  • Results orientated with proven ability to drive the business
