Culinary Procurement and Stock Manager - London

Gaucho Restaurants are looking for a Culinary Procurement and Stock Manager. This is an exciting position for someone looking to progress their career with an expanding business who has the following experience. 

A key part of this role is to be responsible auditing, monitoring and reporting for the following

  • Group Stock Reconciliation
  • Ordering levels
  • Invoicing
  • Cost of Sales results 

The Culinary Procurement and Stock Manager is to assist Managers and Head Chefs to achieve maximum financial profitability from food sales through coaching and training on stock taking, accurate stock management and R9 system management.

 The successful candidate:

  • Previous industry experience as a Head Chef in a Premium and Branded background
  • 5+ years’ experience of stock reporting
  • 5+ years’ experience of menu costing and COGS calculating
  • 5+ years’ experience of supplier price negotiations and in depth product knowledge
  • 5+ years’ experience of negotiating contract periods with suppliers

Tasks and Responsibilities:

  • To manage, review and be present in a restaurant during the weekly stock take results and End of Month stock take results across all Rare Restaurants.
  • To review and analyse revenues, COS % and profit and loss on all Rare Restaurants
  • Monitor and report the Wastage/Training allocation by all Rare Restaurants
  • To conduct random spot-checks on stock holding and food storage in all restaurants, including inputting physical food stock counts into R9 to analyse results and highlight any discrepancies in opening, consumed and closing stock values
  • To identify all food cost information and help the Finance Team compile the biannual weighted average menu model ready for the menu development process
  • To manage the weighted menu model through the menu process to be signed off by the Managing Director
  • To conduct one to one training sessions on the R9 system when required with new Head and Sous chefs.
  • Ensure the maintenance of R9, Starchef and Aloha including purchasing codes, system updates, PLU, Till button update and Allergen information
  • To manage and implement a set of failsafe R9 policies and procedures designed to mitigate risk of stock manipulation and inaccurate results
  • To input recipes and volumes into R9 as agreed with the Head of Food
  • Conducts average yields of new products as agreed with the Head of Food
  • Reports back accurate costing and accurate COS% of new menu items
  • To review all food menus on an ongoing basis and update as needed to ensure accurate up to date cost of sales results
  • Update and manage Allergen charts regularly to ensure all restaurant and guest facing information is up to date and accurate
  • Responsible for all communication of relevant information regarding system and process updates to all Rare Restaurants, Head Chef and Operation teams
  • Ensure Head of Food is kept informed of issues or queries that arise
  • Attend BOH departmental meetings to report key information related to COS
  • Request relative product information from suppliers for costing and allergen processes
