Trainee Chef (Chef Academy Programme) - Nationwide

This is a fixed term position for up to 12 months in the first instance, which will commence in February 2023 with an intensive three-week training programme.

  • £10.08 per hour plus benefits.
  • Hours of work 37.5 per week

Travel between some of our beautiful centres in the first three weeks to undertake different elements of the programme, of which will include:

  • FSC Induction Training
  • External Qualifications (Level 2 Food Hygiene, Allergen Management)
  • Hygiene Procedures  
  • Safe Food Handling
  • Temperature Control
  • Hot and Cold Holding
  • Kitchen Equipment
  • Kitchen Documentation
  • FSC Menus, Recipes, Allergens & Ordering

As a Field Studies Council Trainee Chef you will:

  • Gain valuable experience of:
    • Delivering a quality catering provision to a wide variety of customers
    • Catering to meet differing dietary requirements, including allergens
    • Safe food handling processes and kitchen practices
    • Safe use and maintenance of kitchen equipment
    • Compliance with relevant legislation, including the keeping of accurate kitchen records and documentation
  • Have the option to also study towards a Level 2 Production Chef Apprenticeship with a recognised Apprenticeship Training Provider (HIT Training)

Once formally placed at a centre, you will assist with all aspects of the delivery of the catering service to visiting groups. This will include hands-on cooking and assisting with day-to-day kitchen management tasks including:

  • Cooking and delivery of breakfasts and evening meals in accordance with health and hygiene regulations
  • Preparing and serving hot/cold meals, bakes and refreshments
  • Assisting with the monitoring and recording of all catering functions in accordance with safe catering practices e.g. HACCP, Safer Food Better Business
  • Assisting with the compilation of a varied range of menus to satisfy differing user groups, taking account of special diets and the ‘healthy eating’ agenda using, where practicable, local, organic and fair-trade ingredients
  • Assisting with sourcing suppliers and placing orders
