£35,000 per annum plus tronc 



Our Bar Manager


Working in conjunction with the Food and Beverage Operations Manager, you will create and maintain a diverse cocktail and spirits list which caters to the needs of our guests across our two hotels. Your prime focus will be on the guests' experience of the bar and its beverages throughout their stay and supporting your managers in ensuring the front of house team delivers and upholds exceptional service levels. You will be responsible for delivering impeccable service within a team environment, enthusing, coaching, teaching and supporting. Creating and ensuring a working relationship with all teams is key, as department fluidity is essential for business.

Key Responsibilities


  • With a focus on the bar to achieve and maintain the following:
    • Continually accurate bar lists
    • Continue to build diverse and interesting cocktail and drinks lists and to keep them fluid and ever changing
    • Accurately cost cocktails and spirits whilst keeping competitor pricing and clientele in mind
    • Understand GP and your influence on it

  • Bi-weekly wine orders to ensure the cellar is always stocked in conjunction with the changing nature of the list
  • Accurate monthly stock takes and a good understanding of stock control
  • Ensure the guest has the best possible experience
  • To have flair and passion for the food and drink industry.
  • Responsible for helping with staff training under the guidance of the Food & Beverage Operations Manager
  • Ensure your co-workers knowledge is current and correct, installing confidence in their delivery of your product and nurture and encourage them into becoming their best selves
  • Liaise with events team to ensure private dining and special events are executed well throughout the department
  • Ensuring health and safety and EHO legislation is adhered to, thus daily checks on all house made products to ensure compliance and quality
  • Maintain company representation, ensuring you always look impeccable. 
  • Ensure The Newt’s style of service and ethos is always upheld


Skills and Experience


  • A minimum of 2 years experience as a bartender or in a bar-based beverage-focus role in a high-end restaurant or bar
  • Willingness to develop, grow and keep up with the demands of our developing business and the drinks industry in general
  • Good spirits and cocktail knowledge
  • Good understanding of seasonal and local produce
  • Confident in service and feels comfortable talking to guests whilst showcasing and presenting the wines
  • Excellent attention to detail
  • Great time management and self-motivated
  • Microsoft Office and basic computer skills required
  • Previous experience working with ResDiary and communication platform Teams is preferred
  • Passion for food, beverage and luxury hospitality
