Position Summary

To support senior kitchen management in the overall running of the department.  Check all hygiene records are up to date.  Be involved with menu planning, ordering and training of kitchen associates.   Make sure all food leaving the kitchen to the various outlets is of the high standard expected from the Executive Chef.

Experience:

  • Previous experience working in a similar environment is essential
  • Previous experience working as a Chef De Partie or above is essential.

Skills and Knowledge

  • Strong Communication skills (verbal, listening, writing)
  • Innovative
  • Pro-active and reliable
  • Able to work alone and within a team
  • Excellent standards of cleanliness and Hygiene

Education or Certification

  • Good level of English essential
  • Basic food hygiene / Intermediate food hygiene certificate

SPECIFIC DUTIES 

The following are specific responsibilities and contributions critical to the successful performance of the position:

  1. Ensure all aspect of the kitchen is effectively managed and all guests receive a consistently high standard.
  2. Communicate to all staff, Executive Chef and Management to ensure that all requirements are understood and delivered
  3. Co-ordinate and monitor all training within the kitchen to ensure the correct understanding of responsibilities and tasks by the team, to enable them to achieve best practice.
  4. Support kitchen management with hygiene policies and make sure all kitchen associates carry out the hygiene procedures required consistently.
  5. To be involved with menu planning and food costs, help to achieve the budgeted GP's and kitchen budgets
