Head Chef - Audrey's (Immediate Hire) - Bankside, London

Launching early 2022 – Audrey’s is a bright and bustling all-day café, restaurant and bar situated on a vibrant pedestrian square in London’s historic Bankside. This unique former Victorian WC is now home to an open kitchen, bar and café offering informal drinking and dining throughout the day. The kitchen is inspired by modern bistros using ingredients sourced locally at Borough Market, favouring British, organic and sustainable produce. The bar focuses on a simple and concise cocktail menu, offering classically inspired, unpretentious drinks, alongside a range of interesting modern wines from independent, biodynamic and organic producers.

We are looking for a talented chef to lead on the opening of this new venture, to develop menus and inspire the kitchen team, alongside the Executive Chef. This position is a great opportunity for someone who has reached the stage where they would like to carve out an identity for themselves in a brand-new space and get their name out there.

Requirements

RESPONSIBILITIES

  • Direct all elements and activities within the execution of the food preparation process to the highest level of standard in quality and appearance.
  • Develop and implement menus with new or existing culinary creations including daily specials. Ensure variety in the offering as well as the quality of the product.
  • Inspect, approve and “polish” all dishes before they reach the customer
  • Plan and execute requisitioning of food and necessary equipment according to forecasted need and identified shortages.
  • Select, train, evaluate, lead, motivate, coach, and manage the performance of all kitchen staff.
  • Foster a climate of cooperation and respect between coworkers
  • Control labor and operating expenses through effective scheduling, budgeting, purchasing decisions, and inventory control.
  • Comply with all regulations and standards around nutrition, hygiene and health & safety.

EXPERIENCE AND ATTRIBUTES

  • Proven experience as Head Chef or Sous Chef ready to step up to the next level.
  • Capable of effectively leading the team during a busy and demanding shift
  • An inspiring manager who can push people to raise the quality of the execution of dishes.
  • A passionate, approachable individual who is confident with front of house presence.
  • Hungry to make a name in the London food scene
  • Outstanding communication and leadership skills
  • Up to date with culinary trends and optimized kitchen processes
