Resort Sous Chef - Sutton Coldfield, West Midlands

The Belfry Hotel & Resort has a new opportunity for a Sous Chef to join resort team. Ideally you will have at least four years’ experience within a hotel, and be looking for a business that can refine your business acumen skills and people management skills to help develop you into an assertive member of the kitchen management team.

As Resort Sous Chef you will be able to work across all of our hotel kitchens, including our Rosette restaurant The Ryder Grill, Sam’s Clubhouse, and Banqueting, room service, and our golf outlets.

The Ryder Grill

The Belfry Hotel & Resort is known for our 24 conference and events facilities due to the amazing food and service that we provide. Our Banqueting team are responsible for that food delivery, our busiest kitchen providing thousands of meals per week.

The Ryder Grill & Kitchen is a 220 seat restaurant that offers a number of menu options, ranging from our stunning one rosette À la Carte menu to chefs table and a Sunday Carvery. The Ryder Grill & Kitchen also benefits from a theatre kitchen where we prepare and cook our steaks and roasts all in view of the guest. Our menus are seasonal so you will learn how we build a menu, cost it and deliver it out to our guests.

Banqueting

The Banqueting team can go from cooking meals for top celebrities for awards evenings to ensuing a bride and grooms big day goes off with food that the guests will remember for years to come. The kitchen runs with a number of menus to give the guests variety, as well as preparing food for our conference and events facilities, Banqueting also prepare food for the Ryder Grill, Chefs table for both day and evening service.

Sam’s Club House

Sam’s Club House is our resort sports bar, a modern sports outlet with a club house feel open from breakfast till bedtime. Sam’s offers a choice of areas within the outlet from large sofas to relax, Sam’s Club House dining restaurant and a lively bar area. Surrounded by large screen TV’s showing a variety of sports, Sam’s is a hub of activity for casual meetings and pre and post golf eating and drinking.

The menu in Sam’s Club House is a mixture of clubhouse classics and Belfry touches from sharing boards, burgers, and buckets of wings to wraps, pies and catch of the day… In summer season the outside patio and bar opens and can provide dining options for up to 250 guests at any time and approximately 500 covers per day.

What your day will look like

As a Resort Sous Chef your day will be focused on the running, training and development of the team to deliver our stunning menus. You will be an inspirational leader, a quick thinker, and a brilliant communicator.

  • Set up and preparation of menus items ready for food service, numbers based on hotel occupancy for the resort
  • Cooking and delivering beautifully crafted food using the best ingredients sourced from local suppliers
  • Responsibility for running a safe and compliant kitchen
  • Running a section of the kitchen throughout a busy service and providing support to your teammates to ensure a fast and accurate delivery
  • Management, training and development
  • Opportunities to order stock, write menus alongside the kitchen managers, implement menu ideas
  • Deputising for the Head Chef

Working Hours & Holiday Entitlement

48 Hour Contract, five out of seven days.
Holiday entitlement – 28 days increasing to 31 days after 2 calendar years and 33 after 5 calendar years
