Stoke by Nayland Resort is looking for an enthusiastic Sous Chef to join their team.
Stoke by Nayland Hotel has a beautiful setting within the Dedham Vale area, on the Essex and Suffolk Border. Within the hotel are 3 individually-themed dining experiences, serving hotel and local diners.

Key Tasks
Sales
- Train the staff in dishes so they are equipped to upsell
- Promote the company in a positive manner around the hotel
Profit
- Minimise waste
- Ensure wage budget is kept in control
- Train junior staff to prep to meet the needs of the business
Customer Satisfaction
- Reflect on customer feedback to ensure we are delivering the right product for our clientele
- Attend customer feedback meeting
Team
- Train and maintain staff wellness
- Communicate regularly with your team, and report to the executive head chef
- Keep staff training in check
- Train staff in set SOP’s
- Keep a balanced atmosphere in the kitchen
Legislation
- Ensure allergen data sheets are up to date
- Make sure staff are trained in COSHH, HACCP and allergens
Notes
Free overnight stay on completion of probation. This will need to be taken within a certain timeframe, and subject to current bookings and availability.
For staff bookings up to 7 days in advance, hotel room rates for a member of staff (can include a guest in the room at no additional cost) are £55 B & B Monday – Thursday, £75 B & B Friday – Sunday
For staff bookings up to 3 months in advance, hotel room rates for a member of staff (can include a guest in the room at no additional cost) are £75 B&B Mon-Thu, £95 B&B Fri-Sun (only a maximum of 2 rooms per night can be booked at this rate on the same night in the hotel, and is on a first come first served basis).
