Sous Chef/Senior Sous - Camden, London

Working in a busy kitchen, assisting the head chef with daily duties to help the operation of the kitchen. You will be working alongside other chefs and your duty is to maintain preparation to the required levels and be confident in running your own section and supervising your juniors. You must have exceptional culinary skills and knowledge of different cooking styles and trends. You must follow health, safety and hygiene practices and regulations at all times. Most importantly you must be able to step up and be confident in running the kitchen in the absence of the head chef.

A bit about the role.

  • Preparing food to the standard instilled by the head chef
  • Cooking fresh and seasonal produce
  • The ability to work in a high pressured but fun environment
  • Day to day running of your section
  • Adhering to food safety & quality regulations
  • always maintaining kitchen cleanliness
  • Presenting food to the pass correctly and efficiently
  • Learn and understand the current seasonal menu
  • Minimalize spoilage and waste.
  • Make sure back storage areas such as dry stores and fridges are kept clean and organised
  • Cleaning schedules are up kept up to date
  • Equipment is kept clean
  • Compile menus, rotas and attend meetings in the Head Chef absence.
  • Ensure that all kitchen porters are practicing high standards of hygiene within the kitchen and back of house areas.
  • To carry out stock checks and prepare paperwork for the Accounts Department.
  • Constantly check quality of the food leaving the kitchen
  • To order and purchase food in an economical manner in the absence of the Head Chef
  • Promote good working relations with all other departments. Be friendly and courteous to staff, management and guests.
  • Help train and motivate the kitchen brigade to create a happy & well-disciplined team.
