Head Baker - Brighton

£35-40k / Full-time


The Flour Pot Bakery is a family owned independent artisan bakery in Portslade (Brighton & Hove), specialising in long fermented sourdough, yeasted breads and viennoiserie. We serve our own Flour Pot shops across East Sussex and a growing wholesale customer base that appreciate the best quality handcrafted products.


A fantastic opportunity has arisen for an experienced head baker to lead a talented team of twelve direct reports at The Flour Pot, a family owned independent artisan bakery in Brighton & Hove.

We require a candidate with strong leadership skills, excellent standards of communication and passion for outstanding quality. With this in mind, similar experience is essential and our expectations are not only production but also innovation, planning of seasonal changes, staff management and full knowledge of food hygiene protocols.


  • To help to build, lead and maintain an expanding team of artisan bakers to the highest standards of excellence.
  • To help to oversee the production of artisan bread and viennoiserie to the highest industry standards in accordance with the evolving requirements.
  • To be responsible for helping to develop and enforcing production schedules to meet the expanding requirements.
  • To maintain the production standards and specifications required by following exact procedures/guidelines/recipes to ensure the consistency and quality of all products.
  • To develop and innovate new products.
  • To help to train and develop bakers to ensure the highest standards and widest distribution of skills possible.
  • To promote efficiencies and cost saving wherever possible whilst maintaining standards.
  • To use and help oversee the use of all equipment and machinery in the correct manner, training staff where required and reporting any problems through the correct channels.
  • Under the guidance of the Bakery Manager, to ensure food safety standards are adhered to and maintained in the Bakery including in relation to hazard control, health and safety, and personal and production hygiene; and to keep up to date with latest guidelines.
  • To select and use appropriate stock, with due consideration for health, safety and hygiene. In doing so, demonstrating awareness of pest infestation, damaged or faulty stock, and ‘Best before’, or ‘Use by’ dates and to rotate stock accordingly.
  • To select and use appropriate stock, with due consideration for cost and wherever possible to seek out and employ savings and efficiencies.
  • To improve and maintain stock replacement and ordering protocols to ensure the highest standards are maintained and that cost controls and savings are maximised.
  • To complete all necessary and requested documentation to comply with technical, production and company guidelines.
  • To be responsible for ensuring that the whole work area at the end of each shift is cleaned and organised using the correct products and methods.
  • To follow the guidelines of the Employment Handbook in all Employee related matters for which the Head Baker is responsible including holidays and discipline of bakers.
  • To produce a weekly rota for the bakery team, at least 5 days in advance of the coming week. To ensure all sections are manned with the correct level of skills and experience necessary for that section to work efficiently.
  • To ensure the team follow all Covid 19 protocol whilst on shift
  • To work cooperatively with Bakery Manager, Production Manager and the Head of Operations to maintain and build on the professional and cultural standards of the Bakery.
  • To treat every colleague with respect and civility at all times; and to maintain our zero tolerance of bullying and abuse amongst staff for whom the Head Baker is responsible.
  • To maintain the level of personal and professional development and competence required to carry out this role and notify the company immediately of any circumstance that affects this.
  • To lead and motivate the team and individuals for which the bakers are responsible (packers, porters etc) and to help to provide or arrange the training required for them to carry out their roles competently.
  • To maintain (and ensure all bakers maintain) a smart, clean appearance and wear any uniform/safety equipment as required or directed.
