The Newt in Somerset has ancient woodland, historic gardens and far reaching views. It is a unique destination with a multitude of horticultural delights, interactive features and state of the art exhibitions. Visitors can take a tour of the gardens, deer park and cyder press, dine in a choice of different
restaurants and visit the various farm shops.

The Story of Gardening brings horticultural history to life, with playful and sensory experiences for all ages. Expecting to attract some 150,000 visitors per year, The Newt in Somerset is a vibrant and thriving attraction, animated throughout the seasons by special events, workshops and education programmes.

Department Description

Food & Beverage is at the heart of the Hotel and Estate and encompasses a multitude of venues including the Garden Café, Botanical Rooms, Cyder Bar,
Gelato Room & Story of Gardening, with more venues expected to open as we further grow.

Position Summary

The Restaurant Manager will ensure smooth and efficient running of the Garden Café,  you will be the face of one of the busiest and most vibrant venues on the estate. You will be confidant, self-motivated, lead from the front and be passionate about hospitality. Prime focus will be on guest’s experience throughout the department and how your front of house team delivers and upholds the exceptional service levels. You will be responsible for a team of FOH staff from runners to Barman and floor staff, with a team of supervisors. Creating and ensuring a close working relationship with our Head Chef is key, as department fluidity is essential for our business.

Key Responsibilities:

  • Ensure the Garden Cafe runs in the most productive and efficient way through management of costs, staffing controls, sales analysis and forecasting.
  • Ensure our guests have the best possible experience, monitoring and managing guest expectations and make improvements where necessary.
  • Responsible for training, development and retention. Team productivity, performance and presentation are key. (motivation)
  • Create systems to manage your team and overall presentation of your department to ensure high standards areupheld.
  • Garden Cafe F&B offering is to moves with the seasons and are estate lead – liaise with kitchen and garden teams on a regular basis to ensure the best offering is always provided.
  • Maintain company representation, ensuring you and your team always look impeccable. 
  • Ensure The Newt’s style of service and ethos is always upheld.

Skills and Experience

  • Previous experience in a high volume, high standard restaurant enviroment level for two years is required
  • Confident yet approachable with outstanding leadership skills
  • Great time management, self-motivating and driven
  • Great business acumen
  • Outstanding attention to detail
  • Microsoft Office and good tech skills
  • Willingness to develop, grown and keep up with the demands of our developing business
  • Passion for food, beverage and luxury hospitality
  • Previous experience working with ResDiary and communication platform Teams is preferred
