What we need in a nutshell

This is an amazing opportunity for an experienced Restaurant Manager to open our brand new, state of the art ‘Missing Squirrel Bar’ in our brand new re-developed Mill Rythe Coastal Village. We want someone who has the drive to take a brand-new concept and make it a commercial success through creative thinking and, practical and diligent implementation

Who are we?

We are so excited to announce the £10m re-development of Mill Rythe, our Hayling Island gem on the south coast. Set alongside a peaceful estuary, you can switch off in an attractive environment of luxury accommodation, beautiful facilities and friendly staff. Perfect for adults and family breaks, use the swimming pool, dine in our amazing NEW ‘Missing Squirrel Bar’ or explore your surroundings outside of the park. Expect some very special accommodation that no one else offers. We’ll have spacious lodges and holiday homes with hot tubs, beautifully landscaped areas for soaking up the sun as well your own parking spaces and WIFI!

To match the stunning environment, our entertainment will be beautifully crafted and delivered by our talented team. Cosy up under the blanket and watch a film on our outdoor cinema screen, enjoy acoustic vibes over a cocktail in our bar, and in peak-times some street theatre style performances to make you all smile! For the kid’s there will be PLAY activities, water-based fun, bike hire and maybe even some Segway’s!’ 

What you’ll be doing

As part of our slightly bonkers team of holiday heroes, you will be making sure that our guests are fed, watered and having a good time.  This includes:

  • Manage, lead, train and motivate a team to deliver delight
  • Oversee the smooth running of the bar and restaurant, the preparation for service, as well as overseeing service and supervising the after-service duties.
  • Maximise sales whilst driving profitable growth with care and flair
  • Carryout regular stock takes and order, as necessary.
  • Handle deliveries and ensure health and safety regulations are always enforced

One more thing…holidays happen at holiday times and eating, and drinking goes on in into the night, so you’ll need to work your magic on bank holidays, evenings and weekends too.

Skills, experience and qualities you’ll need

We have high standards! We’ll train you up, but you must:

  • Have previous management experience in an F&B environment
  • Have excellent knowledge of Cocktails, Liquor and food trends
  • Show evidence of your superb people management skills
  • Have an eye for detail, a head for business and a mindset for innovation
  • Know your profit and loss from your balance sheet and be able to control costs and grow profit
  • Have knowledge and experience of catering and its many challenges
  • Have energy, enthusiasm, and a positive attitude
