We are recruiting for a Back of House Porter to Support the Head Chef in ensuring efficient and effective cleanliness throughout the kitchen, back yard and that deliveries are put away. To ensure and maintain standards of cleanliness relating to the working areas and equipment in the kitchen, complying with company standards and legal requirements.

The main Responsibilities are:

  • To maintain the standards of cleanliness of all materials passing through these areas to company policy. These areas of responsibility will include: Machinery; cooking equipment, crockery and cutlery, pots and pans, floors and tiles, refrigerators and storage areas.
  • To ensure sufficient material for the performing of cleaning duties are collected from the stores.
  • To dispose of rubbish, as outlined by the Executive Chef and to maintain standards of cleanliness in these areas.
  • To ensure that you are correctly dressed, adhere to high personal hygiene standards.
  • Ensure all standard checklists are used as prescribed.
  • To maintain a professional working relationship with the food service team.

The successful candidate must:

  • Be able to work shifts, weekends and public holidays
  • Be able to speak and read English
  • Be comfortable working in a high pressured environment
  • Be able to adapt to situations quickly
  • Check all food deliveries for correct amounts and as listed on delivery dockets. All delivery procedures to be followed i.e.: date codes – temperatures – packaging details –quality of product – all to be recorded on daily H.A.C.C.P Sheet No 5 and signed. All food deliveries to be stored in correct areas with in fifteen minutes of delivery
  • Keep Back Yard clean neat and tidy at all times adhering to E.H.O. requirements – no mess or fowl odour coming from the Compactor or drains.
  • All cardboard to be bailed and stored in a neat and tidy manner at the rear back gate
  • Milk and Dairy products to be stored in the Dairy Chill Fridge - Check for stock rotation daily
  • Dry goods store to be kept clean and tidy –all goods to be on the appropriate shelves and nothing stored on the floor – all old stock at the front of the shelf and new deliveries placed directly behind –stock rotation.
  • Freezer- all deliveries to be stored on the correct shelves (nothing stored on the floor) and in a tidy and organised manner – floor to be kept spotless and clear at all times 
  • Chemical store to be kept tidy before and after deliveries – all stock to be signed out as requested.
  • Help to keep the staff areas neat and tidy at all times – all rubbish removed daily – recycling bags emptied on a regular basis – male staff changing rooms to be serviced daily with soap and towels -  rubbish bins emptied daily- etc
  • Back of house corridor to be brushed and mopped daily – all doors and walls to be checked for cleanliness daily and any maintenance issues to be reported A.S.A.P
