Kitchen Supervisor - Edinburgh

Full Time ​

ROLE PURPOSE:

  • Manage and motivate employees to meet and exceed expectations in their roles
  • Ensure the highest standards of products and service are delivered to guests, maintaining and enhancing the reputation of the business
  • Develop key employees with potential to progress in the business, matching aspirations and ability to business needs
  • Assist the General Manager with the effective and efficient running of the business 

Responsibilities

  • Training, coaching, mentoring and motivating the team of kitchen assistants and kitchen porters
  • Taking full responsibility for the smooth running of the kitchen in the absence of the Head Chef
  • Assisting the Head Chef with the management of performance and behaviour of kitchen team members in line with company policies and procedures
  • Leading by example and being hands-on with all preparation, cooking, cleaning, waste disposal, set up and close down procedures
  • Working within stock and wage budgets and targets
  • Minimising waste and loss of resources through encouraging efficiency in the kitchen and adhering to established food rotation procedures
  • Maintaining and promoting a safe, clean, tidy, well-organised working environment including main kitchen, pot wash area, dry store, walk-in fridges and freezers and other storage spaces
  • Contributing to and nurturing a culture of productivity and positivity
  • Liaising with and working harmoniously with other departments
  • Complying with and overseeing departmental compliance with HR policies and procedures, staff training requirements and stock management, using Fourth People System, FLOW and FnB
  • Maintain and promote high quality standards in terms of food products, presentation and environment
  • Ensuring maintenance, H&S and environmental issues are handled correctly in consultation with the Head Chef and, where necessary, the Systems Operations Manager 

Essential

  • Minimum of two year’s supervisory experience in fast-paced kitchens
  • Teamworking skills to be able to lead a team and be a part of it
  • Sound written communication skills for completing kitchen admin, emailing suppliers, etc.
  • Excellent oral communication skills for effective and adaptable communication with team members and superiors
  • The ability to cope, work well and inspire confidence and calmness under pressure
  • Good decision-making and delegation skills
  • Problem-solving ability to resolve issues as they arise
  • Excellent attention to detail
  • Self-disciplined, highly organised and resourceful
  • Proactive and positive in approach 

Desirable

  • Experience of working with high quality food products
  • NVQ Level 3 in Food Preparation and Cooking or above or similar qualification(s)
  • Level 3 Food Safety qualification or similar
  • Knowledge of Brazilian cuisine
