Catering Manager - HMP Doncaster - Serco

Permanent, Full Time, 40 Hours Per Week

£25,000 - £30,000 per annum

Key Purpose:

The Catering Manager will organise and co-ordinate all catering operations at HMP Doncaster and will be responsible for the provision of a varied and healthy menu which takes into account the religious, dietary, cultural and medical needs of all prisoners.

Main Responsibilities:

  • To manage, develop and review the establishment’s catering provision
  • To ensure compliance with relevant food safety and hygiene legislation
  • To provide prisoners with a multi-choice menu
  • To provide prisoners with a choice of hot meals at lunch and dinner
  • To provide prisoners with food which is wholesome, nutritious and well-presented
  • To offer all prisoners the opportunity of not less than one (1) hot meal each Day, which is appropriate to any health specific diets and religious requirements of prisoners
  • To provide prisoners with a menu made available on a 4-week cycle which is sensitive to their needs
  • To ensure that prisoners are consulted regularly (at least twice each year) about their meal preferences and that the menu reflects such preferences;
  • To provide catering facilities that support the delivery of the requirements of Prison Service Instruction (PSI) 44/2010
  • To comply with Local Security Strategy requirements and other relevant contractual retirements.
  • To ensure that catering resources comply with all relevant public health and food hygiene Legislation
  • To ensure the security of all foodstuffs can be maintained during delivery, storage and distribution within the prison
  • To provide meals with a hot or cold drink outside normal meal times if the prisoner has missed the meal through no fault of his own
  • To ensure that all relevant paperwork to comply with food hygiene regulations, H.A.C.C.P and Company Policies and maintained
  • To liaise with local and national vendors in the sourcing, procuring and ordering of catering supplies and produce
  • To work alongside Procurement in using preferred suppliers
  • To provide training and supervision to catering staff to ensure that the highest possible standards of cleanliness and hygiene are maintained
  • To provide training and supervision to staff in the use of kitchen equipment
  • To provide training and supervision to staff in main kitchen in preparation of food and beverages for prisoners, staff and visitors.
  • To perform random Quality Checks on servery’s before, during and after meal times
  • To be able to work from directives and procedural manuals and be able to observe, evaluate, and administer the proper management techniques and methods in accordance with the procedures set out by the food service industry
  • To order equipment and produce as necessary and control stock, being aware of waste minimisation
  • To manage plan, forecast and manage catering budget whilst ensuring food quality and quantity is not compromised
  • To train for and carry out any other work reasonably acceptable within the capabilities of the post holder
  • Shift Work and Weekends Required
  • Responsible for the line management and leadership of the catering team, ensuring all company HR policies are adhered to including sickness monitoring
  • To seek continuous improvement and innovation in the delivery of all catering services at HMP/YOI Doncaster
  • Actively engages with the Prisoner forums seeking continual feedback with reference to menu changes and food complaints
  • To attend and chair weekly catering PIAC meetings with the wing representatives
  • To attend Serco group catering meetings as and when required to do so and to share best practice

Knowledge and Qualifications:

  • Recognised Hospitality Industry qualification
  • Food Hygiene Certificate
  • Advanced Food Hygiene Certificate level four or equivalent
  • Extensive experience (+5 years) of managing or supervising large scale catering, ideally within the Armed Forces, Prisons or Hospitals
  • Financial management and planning experience
  • Ability to demonstrate Quality Management Systems, excellent IT, procurement and stock control monitoring processes
  • Ability to identify and provide solutions of high standards aimed at addressing customer needs
  • Ability to multi-task and work to tight deadlines
  • The post holder must demonstrate excellent communication, interpersonal and negotiation skills with an ability to interact at all levels
  • Ability to delegate and effectively allocate resources to get the job done to the highest standard
  • Must possess exceptional organisational skills to achieve timely results. Must demonstrate self-motivation with an ability to work on own initiative and manage own time effectively to achieve results. Must continually seek improved and more efficient methods of working
  • Flexible approach to working hours when required
