As Head Bartender, we are looking for a passionate and bubbly person who can confidently deliver exceptional service to our guests.

ESSENTIAL KNOWLEDGE & EXPERIENCE 

  • A  minimum of 12 months experience as Head Bartender in a similar fast paced   
  • Environment, or 18 Months as Bar supervisor in a larger, high quality restaurant bar
  • Comprehensive knowledgeable of, and passionate about, cocktails, spirits, and wine
  • Excellent service knowledge
  • Confident, individual who is committed to providing excellent customers service to all
  • Demonstrable experience managing a small team
  • Able to effectively manage and delegate tasks to team members
  • Able to work under pressure and multi task particularly during peak hours and extended period increased business
  • Experience of training staff in areas of Beverage service, and drink making
  • Capable hands on manager
  • Good knowledge of  H&S, Food Hygiene and Fire Regulations relevant  to the business
  • Working knowledge of X till system
  • Able to use Fourth Hospitality / employee Management System
  • Good communicator

  • Personal License, or knowledge of UK licensing Laws

GENERAL RESPONSIBILITIES AND DUTIES

  • To provide a friendly, courteous and professional service at all times, to both Customers and colleagues.
  • Ensuring always working in a way which is compliant with current licensing laws and relevant company policies
  • To drive consistency within our service, showed by getting a 90% mystery dinner report
  • To run the bar as your department and to report to your general manager
  • To recruit and train your team accordingly to company standards
  • Is always willing to assist other colleagues, in the bar or the restaurant or front desk when required
  • To ensure correct Mise en Place is completed prior to service
  •  Consistent checks that standards of  are beverage preparation, presentation and quality are adhered to
  • Active knowledge of Food, wine and cocktail, and ensure always aware of any seasonal changes or updates
  • Always ensures effective communication between Restaurant and Bar throughout service, to ensure all staff are aware of any shortages, or other updates.
  • To consistently liaise between Bar and Floor to efficiently deliver all customer orders in a timely manner, and to company standards.
  • Confidently upsells cocktails, premium drinks, sides, snacks
  • Able to promptly rectify any issues relating to orders for drinks, so as to prevent errors and wastage
  • To ensure that Guests are correctly charged, and payments are processed correctly
  • Promptly deal with, and resolve, any complaints or incidents and take responsibility for satisfactory resolution.
  • Develop a motivated and high performing team committed to delivering clear goals.
  • Develop a positive, direct and open relationship with all the team.
  • Review current ways of service delivery and strive to continuously improve through training
  • Ensure maximum productivity of the team at all times.
  • Develop a culture of actively seeking feedback from customers on a regular basis
  • Ensure customers’ requests and feedback, both verbal and written are responded to promptly and efficiently
  • Deliver one-to-one and group training to team to support induction, refresher, and new menu training, and monitor and implement initiatives for continuous improvement through training.
  • To be responsible for the set up of the bar and service areas prior to service according to Tom’s Kitchen standards, and the subsequent handover and closing duties.

  • Carry out an inventory of all the drinks and condiments as and when required
  • Liaising with suppliers to rectify any issues, quickly and satisfactorily
  • To assist with monthly stocktakes as and when required
  • Ensures all cash and stock is securely stored
  • Aware of special facilities for children and disabled customers
  • To ensure opening and closing procedures are carried out to company standards
  • Consistently arrives in a timely manner for the start of each shift.
  • Consistently adheres to uniform requirements, and ensures uniform is cleaned and well maintained, in line with company policy.
  • To assist the management team in light managerial duties such as opening or closing the restaurant pre and post service, including responsibilities such as staff allocation of sections, and duties for the day, cash-up, security of the building, Fire, Hygiene and Health and Safety checks, staff recording of hours, controlling wage cost while on duty, stock taking and control.
  • To consistently provide an excellent customer service by demonstrating thorough product knowledge
  • To maximize sales through “up selling” in a positive and friendly manner
  • To observe and follow Tom’s Kitchen values before serving any drink products (Quality, Freshness, Service and Hygiene).

COMMUNICATION

  • Always effectively communicates with staff prior to service in the ‘Briefing’
  • Always ensure precise and correct ordering of stock
  • Correct handling of incoming deliveries
  • Actively participates in the development, mentoring and training of junior teams
  • Calmly manages unusual or emergency situations to ensure safety of all in the business.
  • Ensure that all team members are coached and given regular feedback to consistently deliver the Ping Pong customer experience
  • To be present and deliver when required, the pre-service briefing and be in constant communication with the kitchen team.
  • Prepare all the beverages to specification in a swift and proficient manner
  • Being a team player and helping other departments when needed
  • Passing down knowledge to support growth company and junior member of the team.
  • Ensures that all staff are fully aware of menu items containing potential allergens

FINANCIAL

  • Assists with week – end and month end paperwork as required
  • To ensure all monies accrued during service are correctly accounted for, and all relevant daily and end of shift paperwork is completed correctly
  • To ensure we hold the right pal level of drink at the time
  • To aim to target the budgeted GP %
  • Ensure bar equipment is in good working condition, and in accordance to health and safety regulations
  • To organise sales incentive with the team in order to generate more sales
  • To look at sales opportunities to drive the business

HEALTH AND SAFETY

  • Attend all training as requested, whether in-house or with an external provider
  • Attend any daily, monthly or adhoc Management meetings, whether timetabled whilst on shift not.
  • Takes responsibility for the H&S of the staff and building whilst on duty
  • Carry out any other duties as are within the scope, spirit and purpose of the job as requested by Management
  • Assumes responsibility for the safety of self, colleagues and customers, in line with current H&S legislation
  • Assist in the protection of health and safety and well-being of our guests and colleagues.
  • To work cleanly, hygienically and safely at all times
  • To report any food hygiene/ H&S issues or incidents to the Manager straight away
  • To report all faulty equipment, machinery and service-ware to the Manager
  • To ensure that all areas within the bar are maintained to the agreed standards of cleanliness and hygiene
  • To ensure all accidents are reported to the Manager and recorded in the accident book
  • To organize, record and control the temperatures of all refrigerated units
