We are looking for a talented individual to join our team in the capacity of Head Waiter for the opening of our new property.

ABOUT THE CONCEPT
VINTRY KITCHEN
Vintry Kitchen is an Asian tapas eatery on the ground floor, with a menu that pulses with fresh, bold Asian flavours from morning to night. Wine is central to our approach — close to the hotel, merchant sailors landing from Bordeaux used to store their wines. At Vintry Kitchen, our wine is tapped straight from the large barrels lining the gantry. Our dishes incorporate the flavours of Asia, from the salty tang of miso and the fiery kick of kimchi, to the freshness of yuzu and gentle heat of wasabi — each dish served on small plates, perfect for sharing.

MERCER ROOF TERRACE
Mercer Roof Terrace, on the top floor of Vintry & Mercer, takes in the sweep of London’s skyline, from the dome of St Paul’s Cathedral to the glass tip of The Shard. Here guests can dine al fresco above the city lights. Inside, the atmosphere is warm and convivial, with floor-to-ceiling glass doors opening wide to the night’s sky.

Vintry & Mercer’s speakeasy-style cocktail bar hidden in the hotel’s basement. The mood is one of retro glamour and sophistication – a reflection of the notorious prohibition speakeasies that crept into the back streets of 1920’s New York.

Your role as Head Waiter will come with the following responsibilities:

• To promote the food & beverage concepts with passion and enthusiasm to all guests and to the service team.
• To be confident in relaying product knowledge to the guest and to encourage the rest of the service team to do the same.
• To create an environment that supports the guests’ understanding of the F&B concepts.
• To encourage the team to educate guests, enabling them to make an enlightened choice.
• To have a good working understanding of all costs and charges relating to F&B operations.
• To be fully aware of and implement the current licensing laws and the hotel’s licensing policy, fire regulations and evacuation procedures.
• To have a thorough knowledge of the operational capability of the Micros Point of Sale system to ensure proper operation at all times following the policy manual in the Department including the handling of cash when applicable.
• To handle minor complaints in a professional and courteous manner and forward suggestions and comments from guests the F&B Manager. To refer all serious complaints to the F&B Manager.
• To display a full knowledge of the food and beverage menu with regards to contents, mise-en-place and accompaniments/condiments.
• To work closely with the F&B Manager to ensure the performance of F&B operations
• To be flexible to carry out other duties and assignments as requested by the F&B Manager

Training and Qualifications

• A basic WSET in Wine & Spirits would be beneficial.


Functional Skills, Knowledge and Experience

• A minimum of 2 years of experience in an establishment of a similar standard including 1 year in supervisory or managerial role
• A good knowledge of classical and modern cuisine and wines.
• A knowledge of condiments and accompaniments.
• A good knowledge of cocktails, spirits and other beverages.
• To be competent on all set up procedures and service skills as described in the main duties.
• A sense for showmanship and creativity is desirable.

Social Skills and Experience

To possess the ability to communicate with guests and staff in order to project a positive image of the Vintry Kitchen and Mercer Roof Terrace. The ability to maintain hotel standards of work under pressure.
