Head Butcher - Fleet - Ship Based

As Head Butcher you will be managing a dedicated Meat and Fish food preparation team. With your aim being to provide an efficient and financially smooth operation to ensure the guests and crew have a fantastic culinary experience in our restaurants.

As Head Butcher your responsibilities and duties will include:

  • Ensuring the provision of high quality, professionally prepared meat and fish products

  • Managing, monitoring, developing and training members of the team to ensure the provision of high quality, professionally prepared products in line with the corporate menu cycles

  • Identifying training needs and coaching and mentoring junior team members, making sure your team are competent to undertake their roles

  • Working closely with the Chef de Cuisine to control cost and wastage within the meat & fish preparation area.

  • Informing the Chef de Cusine informed of any shortages or discrepancies in products or ingredients, highlighting any non-compliance and gaining authorisation for suggested menu changes.

  • Attending daily call over to confirm production figures and menu cycle and ensure the correct scaling up is achieved.

  • Proactively planning activities ensuring products are thawed in time for need, ensure all storage times and requirements are followed

     

     

Ideally, for this role you will have experience of working within a cruise ship Galley or in a hotel butchery, large butchers shop, supermarket butchery or abattoir. An Extensive experience of thawing, de-boning, cleaning, grinding, mincing, portion-cutting and marinating of meat would be advantageous. However, the above are not essential. We believe in hiring people with the right attitudes and strengths over their competencies!

As Head Butcher you will be expected to plan ahead for future cruises so if you are the type of person who is good at anticipating work needs this may be the role for you. In addition we would love it if you were a natural team player and energised by working with others. As part of this role you will have to liaise with other members of your team, therefore your ability to express yourself clearly and keeping others in the loop will ensure that you produce consistent, high quality products. If you feel you are naturally adaptable to changing circumstances, with great initiative this may be the job for you.

Please note that a Personal Survival Techniques (PST) STCW course is required for this role.
