As Chef Patisseir you will lead on a dedicated pastry production section ensuring a smooth operation making sure the guests and crew have a fantastic culinary experience in our restaurants.

 

As Chef Patisseir your responsibilities and duties will include:

  • Managing, monitoring, developing and training members of the team to ensure the provision of high quality, professionally prepared food products.

  • Effectively managing own area, ensure adequate resourcing of team, complete appraisals identifying development opportunities and provide guidance, motivation and direction as required.
  • Ensuring all work is carried out safely, efficiently and in accordance with all current safety and company regulations, including the Public Health Policy, HESS, FSP and ILO. Identifing areas of improvement to ensure attention to detail is achieved by the team and a consistent passenger dining experience provided, continually striving to improve passenger satisfaction scores.

  • Overseeing the creation of celebration cakes and desserts for special occasions on board such as weddings and the renewal of vows.

  • Liaising with the Chef de Partie to confirm the daily menu requirements and discuss the daily working processes of the team.
     
  • Monitoring and managing the costs and resources within own area and inform the Chef de Cuisine of any issues immediately.
 

Ideally, for this role you will have previous experience of working as a Pastry Chef onboard a Cruise Ship. A proven track record of comprehensive industry knowledge of pastry techniques and skills would be a bonus. If you have an award in supervising Food Safety in Catering it would be desirable. But the above are not essential. We believe in hiring people with the right attitudes and strengths over their competencies!

As Chef Patisseir you will be expected to plan ahead for future cruises as well as ensuring that the daily menu requirements are met and discussed with your team so if you are the type of person who is good at anticipating future work needs this may be the role for you. In addition we would love it if you were a natural team player and energised by working with others. As part of this role you will have to liaise with other members of your team, therefore your ability to express yourself clearly and keeping others in the loop will ensure that you produce consistent, high quality products. If you feel you are naturally adaptable to changing circumstances, with great initiative this may be the job for you.

Please note that a Personal Survival Techniques (PST) STCW course is required for this role.
