Apprentice Chef de Partie - The White Hart - Overton, Basingstoke

The White Hart and Upham Pub Company together with Brockenhurst are seeking Chefs, who have ideally completed the Commis Chef course and working towards or already in a Chef de Partie position. The apprenticeship covers all aspects of Health & Hygiene, Safety, People, Business, Communication with others and a complex level of meat, poultry, fish, vegetables, sauces, pastry, desserts etc.

Duties will include:

  • Preparing and cooking form fresh complex dishes of: Fish, Meat, Poultry, Shellfish, Game, Vegetables, Sauces, Stocks, Soups, Bread & Dough, Paste & Patisserie and Hot & Cold Desserts.
  • Stock control- Organise food stock and fridges to ensure food is kept at optimum temperature, quality and food safety
  • Adhere to portioning control and use of knives and kitchen equipment safely, and appropriately
  • Commit to your learning and develop to cover all your knowledge skills and behaviours expected
  • Ensure you learn and follow health and safety rules
  • Report any issues or complaints from customers , staff or suppliers and liaise with your line manager accordingly
  • You will learn about special requests eg vegan food and vegetarian, gluten and nut allergy aware.
  • Commitment and respect to oneself, customers and colleagues is paramount.

You will champion a variety of our fresh and local produces eg vegan food and vegetarian, gluten and nut allergy aware and food hygiene. Commitment and respect to oneself, customers and colleagues is paramount.

We will expect you to be keen to develop yourself to be able to fully support leadership, contribute to the team and with the ability to take initiative. You will be expected to support all areas of the business, work events and functions where you will be representing us.

  • Punctual and willing to learn to develop but confident in own cooking skills

Desired qualifications

  • A-C GCSE or equivalent English, Maths or Functional Skills to Level 2 essential,
  • Previous NVQ Level 2 or Level 3 in Cookery qualification, such as Professional Chef, essential
  • Food Hygiene essential

Future prospects

  • You will be trained to take on further responsibility as your role develops and after your apprenticeship has completed.
  • Our business is expanding rapidly so there is lots of potential to progress within the business.

Things to consider

  • A passion for food and interest in developing kitchen skills. If you are successful at interview, you may be required to work a trial shift apprenticeship appointment is confirmed.
  • Evening and weekend work shifts will be requested so please ensure you have suitable transport arrangements to be punctual and travel safe. Live in accommodation is available with this role.
