You will be expected to achieve a level of service through the constant monitoring of our established brand standards. As a result you should be highly attentive to detail and be capable of delivering consistent standards. You should have a warm, personable nature and a can do attitude. In this type of industry teamwork is key; you should be a strong team player willing to lend a hand wherever needed.

You must have experience in a similar environment with the knowledge and confidence to deliver the role described below combined with a passion for delivering exceptional service through your team.

As a Head Chef you will:

  • Deliver the food and beverage strategy in order to achieve budgeted commercial returns Drive consistent standards and profit performance through effective selection of resource, inspiration and development of restaurant teams. Drive quality and value that ensures great guest restaurant experiences, by being obsessed about standards and hospitality, then leading and challenging team members to achieve the highest levels of service. Communicate the strategy and create buy in with Food & Beverage team        members. Ensure that all aspects of kitchen activity are co-ordinated to create a professional, safe, hygienic and cost effective working environment. Deliver a smooth flow of work in the kitchen, controlling portion size and examining temperature, quality and appearance overall. Supervise trainee chefs, particularly when they are using potentially dangerous equipment. Assist other chefs in their section when required. Establish and use clear lines of communication within the kitchen  operations and with food service staff. Report all faults or damage to equipment in accordance with hotel procedures. Maintain operations standards to the highest possible level in respect of

service, hygiene, health and safety and ensure there is minimal wastage

  • Ensure brand standards are delivered consistently using appropriate training resources tools and audit measures Ensure that Food items are delivered in appropriate packaging and all items are checked and temperature at time of delivery is recorded. Ensure that Food items are handled, cooked and served to company specification in accordance with FRESH. Control and deliver consistent standards to ensure that the workload rate is sufficient to ensure the efficient running of the kitchen

Foster a culture of passion for food and beverage knowledge by utilising and conducting tastings in order to maximise sales. Maximise utilisation of suppliers to deliver product training on a regular basis. Engage with the sales teams to ensure best use of all familiarisation trips Research sales mix trends and adjust merchandising to promote and drive sales of high cash and percentage margin items.  Create engagement in the food and beverage strategy, keep all stakeholders up to date with what is coming up through the Head Chef meetings Share experience and personal passion to lead and embed a strong development culture and training and development is consistently high priority. Recruit team members who embody the role model descriptions of the high performance behaviours. Using the KPIs, benchmark individual team members performance in terms of sales, and review their performance against the five high performance behaviours. Review wage cost and ensure staffing levels are at the appropriate levels to drive conversion Ensure stock is kept to the correct par levels are in line with specification. Ensure all relevant stock control procedures and best practice procedures are in place Adhere strictly to food hygiene regulations according to FRESH, HACCP and EHO directives. Ensure all relevant paperwork is up-to-date and in order for monthly stock take. Work effectively with other departments within the hotel Comply with the Food Safety and Health and Safety procedures as specified by the CMI and internal audits and achieve a minimum of 85%.
