We are currently welcoming applications to lead our Kitchen team in Balfes as Head Chef. 

Balfes is a vibrant all-day bistro with a 20-seater outdoor terrace, a zinc covered bar and an open kitchen serving beautifully prepared dishes such as seaweed-cured salmon gravlax, roast Atlantic hake with quinoa and Asian greens, and superb rib eye steaks cooked on a Josper grill.

Combining the energy of a trendy New York eatery complete with subway tiles and industrial-chic flourishes and the relaxed elegance of a high end Parisian brasserie, Balfes serves the finest locally sourced produce.

Our Head Chef is responsible for managing the kitchen and ensuring the delivery of consistent high standards of food and service to our customers. The ideal Head Chef for Balfes will have previous management experience in a similar role and demonstrate a great knowledge and involvement in the local food scene. You will have experience in developing excellent standards of service and effectively deliver this standard to the team. The ability to motivate and inspire a young kitchen team is vital to your success.

Key Responsibilities include;

  • Successfully managing the Balfes Kitchen operations
  • Support the professional development of a team of 20
  • Ensure all food leaving the kitchen is produced to the highest standard in food concept and presentation
  • To ensure that all dishes leaving the kitchen are prepared to the approved standards of presentation
  • Adhere to HACCP procedures at all times
  • Participate in monthly stock takes 
  • Responsible for the monitoring of food quality & hygiene standards
  • Create a positive environment which allows continuous innovation and creativity
  • Manage and control costs i.e. payroll, wastage, stock
  • Complete and monitor weekly rosters ensuring that costs are in line with forecast
  • Ensure compliance with all regulations regarding Health & Safety
