Supervisory Responsibility for all FOH & BOH teams

POSITION OBJECTIVE 

 Overall scope and purpose of job:

Day to day management of the restaurant, ensuring service standards are met and Company policies and controls are implemented.

To act as an ambassador for Tom’s Kitchen ensuring that a positive brand image is strengthened and maintained in all interactions with customers.

ESSENTIAL KNOWLEDGE & EXPERIENCE 

  • A  dedicated professional with a minimum of 18 months as AM / AGM in  large busy high quality restaurant Excellent all round culinary skills
  • Comprehensive knowledge and understanding of current Food Hygiene, H&S, COSHH, RIDDOR, HACCP, Fire  legislation, relevant to the business
  • Comprehensive knowledge and understanding, and a passion for, excellent quality, well prepared, fresh food Comprehensive knowledge and understanding, and a passion for, wine spirits, cocktail     Outstanding knowledge of excellent service Confident, individual who is committed to providing excellent customers service to all Demonstrable experience managing a large, diverse team covering, restaurant, Bar and Reception Hands on manager Thrives, but remains calm under pressure, Expert trainer with knowledge of all areas of food and wine service Demonstrable experience of successfully training, mentoring and developing staff Capable hands on manager Comprehensive knowledge of  H&S, Food Hygiene and Fire Regulations relevant  to the business Comprehensive understanding and knowledge of Tissl till system or similar Confident user of Fourth Hospitality / Stock on line / Online Rota System or similar. Confident user of Book a Table or similar reservations systems Effective Problem solver Good understanding of Employment Law Experience of collating  payroll and new employee information Experienced with Recruitment, interviewing, trialling and on boarding of all levels of staff Demonstrable experience of meeting and adhering to GP’s, Food costs and labour costs Experienced with internal Stocktaking and relevant paperwork Experience of producing costed, weekly department rota’s Fire Warden training Strong track record of regularly passing Food safety audits WSET level 2 Train the trainer Award Level 2/ supervising Food Hygiene award COSHH trained Level 2 H&S award NVQ level 3 or equivalent First Aid Award

GENERAL RESPONSIBILITIES AND DUTIES

General

  • To be friendly, courteous and professional at all times to colleagues, suppliers or anyone entering the business. Consistently leads by example by personally demonstrating the highest standard in all duties that are carried out in relation to the business
  • Wears the appropriate, clean and well maintained clothing and footwear for each shift, which matches the dress code for the role, in line with company policy.
  • Consistently arrives in a timely manner for the start of each shift. Demonstrates effective and efficient time management, which acts as a bench mark for all to achieve

Stock and Cash controls

  • Always ensures that all Cash and stock are securely stored Monitor all cash handling procedures, and ensuring any irregularities are reported and investigated   
  • Aware of the weekly and monthly financial targets, set for the business and that they are met.
  • When targets are not met, prompt, affirmative action is taken to affect a reversal in results Always ensures that all food which leaves  the kitchen is made to company approved, costed, spec recipes, as per company standards Accurately complete all stock takes on a weekly and monthly basis

Staff/ HR

  • Produce correctly costed weekly rota, and accurate timesheets which meet required staffing levels. Ensure staff adhere to the weekly rota, and  completed timesheets are given to HR in a timely manner Work with HR Manager to ensure any actions regarding wage costs are compliant Advise HR on a weekly basis of all vacancies
  • Assist the HR team with all pre-opening recruitment
  • When required assist with pre-opening training

Safety

  • Ensures all staff in the business, are aware of, trained in and adhere to  current Health and Safety and Food Hygiene Encourage all employees to make the safety of themselves, colleagues  and customers a paramount consideration
  • Ensure appropriate action is taken in regards to RIDDOR, and any occurrences are correctly recorded and reported to the General Manager and relevant individuals at Head Office
  • Guarantees all allegations, or reports of, food poisoning are correctly recorded and investigated by appropriate people, including external suppliers and Food Alert, where in place Ensures any equipment broken or not working safely is immediately removed from use, and repair or replacement is organised at the earliest opportunity.

Training

  • Actively assists with the training and development of the restaurant team Encourages and leads the team to develop excellent knowledge of all Tom’s Kitchen Food and Wine.
  • Introduces effective incentives which encourage the restaurant team to actively upsell
  • Give the employees space to develop and grow, using their own initiative Regularly monitors staff performance to asses impact of training, and retrains staff who fall below recognised standard Works in collaboration with HR to develop new and engaging training materials Leads, and positively, contributes to all staff meetings and training as requested, whether in-house or with an external provider

Brand

  • Assist with the training and development of brand standards, to all Restaurant staff Empower the Restaurant Management Team to deliver the brand values at all times, and to all employee’s
  • Ensure brand standards are achieved and consistently maintained in all new openings for the business
  • Promote the Tom’s Kitchen brand values in everything you do related to the business

Misc.

  • Assist in raising the profile of Tom Aikens Group.

Carry out any other duties as are within the scope, spirit and purpose of the job as requested by the Directors.
