Food & Beverage Manager - Hatton Court, Gloucester

We require a talented and experienced Food and Beverage Manager to join our team at the 4 star Hatton Court Hotel.

Key Outline of Job

  • Ensure the efficient and profitable operation of the restaurants and the team on a daily basis
  • Supervise, train and motivate staff to achieve high company standards and to comply with food and health and safety regulations
  • Close liaison with all colleagues to ensure an efficient and smooth operation during service, ensuring the highest standards at all times and exceeding customer expectations
  • Work in a professional and efficient manner in willing co-operation with others at all times
  • Work in a safe manner that does not harm or injure self or others
  • Ensure that the high standards that the Company expects are maintained
  • Be polite and courteous in your behaviour at all times
  • Gracefully receive constructive criticism
  • Ensure that all potential and real hazards and defects are reported and reduced immediately
  • Be security conscious at all times
  • Understand the emergency evacuation procedure specific to Hatton Court
  • Work together with the team to ensure that the hotel is the best it can be

Key Points of Job

Business Activities

  • Act as a role model to all colleagues, leading by example and setting the pace and standards
  • Roster food and beverage team, appropriate to sales levels and in Ensure operating cost parameters are met
  • Ensure payroll information for food and beverage team is Deal with poor performance through informal reprimands and where necessary the company disciplinary procedure – in conjunction with the General Manager
  • Linen controls to be effective and compliant with budget parameters
  • Crockery, cutlery and glassware budgets to be managed and effectively controlled
  • Be proactive in problem solving
  • Ensure active promotions at all times to drive revenue through food and liquor

Front of House

  • Co-ordinate the entire operation of the food and beverage areas during scheduled shifts
  • Ensure the food and beverage team adhere to the company’s uniform standards and appearance
  • Manage the food and beverage team throughout their shift and provide them with feedback and clear guidance
  • Ensure the food and beverage team are effectively informed, trained and motivated on service, presentation and how to maximise customer care and in-house sales
  • meet and greet customers and organise table reservations
  • ensure customer requirements are met
  • respond to customer complaints sympathetically, professionally and efficiently
  • handle difficult situations calmly and effectively
  • help in any area of the hotel when circumstances dictate
  • Deliver company standards
  • Implement and ensure company health and safety policy is met at all times
  • maintain high standards of quality control, hygiene and health and safety
  • ensure procedures are established and maintained for stock levels and order supplies
  • ensure bars and restaurants are clean and hygienic; ensure cleaning rotas are adhered to
  • ensure all staff work in a safe manner that does not harm or injure self or others
  • ensure any equipment used is maintained in a safe working order
  • ensure any faults or defects are reported to the maintenance department
  • ensure all potential and real hazards and defects are reported and reduced immediately
  • ensure the correct and safe use of detergents, chemicals and machinery
  • promote a positive perception of the company at all times both internally and externally
  • attend company meetings as requested
  • adhere to all company policies, procedures and business ethics codes
  • attend any relevant training when requested
  • provide timely feedback to management

Systems compliance

  • ensure daily, weekly and period administration is to company standards and meets deadlines
  • ensure no unauthorised suppliers
  • carry out accurate stock takes as determined by the management

Personnel skills

  • identify food and beverage recruitment needs and agree action plan in a timely manner
  • recruit a team that meet and exceed customer service standards
  • identify and arrange training needs in agreement with the General Manager
  • ensure employee information is requested and returned signed to HR in a timely manner
  • assist in the performance review of all food and beverage staff

Carry out any other duties as requested by the hotel management or Directors.
