Executive Pastry Chef - Shangri-La Hotel, At The Shard, London

We have an amazing opportunity for a Head Pastry Chef to join our kitchen brigade. You will be responsible for all Pastry requirements throughout the Shangri-La At The Shard London Hotel.

Shangri-La At the Shard London is the epitome of elegance and comfort. The 34th to 52nd floors of Renzo Piano’s iconic building house the hotel, which is Shangri-La’s first property in the UK. Within the hotel there are 3 hospitality outlets as well as events spaces, 24 hour in room dining service, events and banqueting.

Ting:

Derived from the Chinese word for ‘living room’, TĪNG, is the collective name of our signature restaurant and lounge on Level 35.  Whether it is breakfast by sunrise or tea at sunset, soak in a backdrop of unsurpassed, iconic London views while savouring the best of British fare with an enticing Asian twist. Open for breakfast, lunch, dinner, afternoon tea and late supper, TĪNG is the ideal culinary destination for any occasion.

Gong:

With a dramatic backdrop of unparalleled views, GŎNG, the hotel’s destination bar – and the highest bar in London – brings a new dimension to the city’s social scene. Perfect for sunset cocktails and late-night drinks, the bar offers three lofted areas; a cocktail bar, champagne bar and an infinity pool*, for guests to relax and soak in the stunning cityscape.

Uncomplicated and seamless, the bar’s service ensures the ultimate escape from the city’s bustle. Sample one of the delicate, signature cocktails or indulge in rare, vintage champagnes available by the glass. Thursday – Saturday nights feature a DJ by the pool area from 8:30pm.

Lang:

LÁNG, meaning ‘pathway’ in Chinese, is the hotel’s local café and wine bar on the ground floor, where guests are welcome to relax and enjoy great food.

Enjoy a delicious selection of fresh and locally sourced light bites and meals, from the famous Kappacasein Cheese Toastie to a Cannon & Cannon charcuterie platter complete with Neal’s Yard Dairy cheese and Bermondsey Street Honey.

What we are looking for?

We are looking for a self-starter who can manage a varied workload and isn’t scared of getting stuck in. The role will focus on being responsible for both production and cooking of all Pastry requirements throughout the hotel. A natural person who will enjoy the development of others. Recruitment as well as retention of our team members, with support of our Talent & Development manager.

You will:

• Lead a brigade of 14 pastry chefs and working under the leadership of the Executive Chef who reports into the F&B Director.
• You will ensure that all food preparation meets our quality and hygiene standards at all times. Have a working knowledge of food safety and HACCAP.
• Obtain relevant gastronomy qualifications.
• Be creative and have attention to detail.
• Be highly organised, able to plan their time and possesses excellent communication and interpersonal skills.
• Write menus, source product, costing, ordering and general office administration duties.
• Managing budgets and writing Rota’s.
• Experience in working in a similar hotel or restaurant background.
