We currently have a vacancy for a Pastry Junior Sous Chef joining our team.

Job summary/ purpose:

The Junior Pastry Sous Chef will be responsible for assisting the Pastry Sous Chef and Executive Pastry Chef  in running the Pastry Kitchen located on 34th floor.

The Junior Pastry Sous Chef ensures the smooth running of the section and sees that all areas of that section maintain the Shangri-La London standards.

He/She also provides supervision to the more junior members of the team, and assumes responsibility for outlets in the absence of a Pastry Sous Chef or/ and Executive Pastry Chef.  

The main Responsibilities are:

  • To ensure and maintain the highest standard of all food preparation, service and hygiene in the Pastry kitchen area
  • Ensure Pastry and Bakery kitchen areas are maintaining Shangri-la Food Safety Management System and HACCP controls and standards at all times
  • To maintain food safety and hygiene practices;
  • The colleague is fully aware of our current IMS policies and procedures and will follow them in every business-related activity, specifically food safety and environmental safety related. In addition, the colleague will enforce the IMS system with the direct reports in related departments and divisions across the hotel.

Essential Requirements

  • Culinary certificate or apprenticeship
  • HACCP and Health & Safety certificate
  • Previous experience as a Senior Chef de Partie at a Michelin Star Restaurant, or High End Fine Dining.
  • Oral and written fluency in English
  • Creativity and attention to detail
  • Proven leadership skills
  • Excellent administrative skills
  • Ability to handle stress
  • Ability to deal with quality and production control

Desirable Requirements

  • Proven and stable London experience
  • Computer knowledge
