Chef de Partie - Pembrokeshire

We are looking for an individual mainly based in Twr Y Felin Hotel who has the ability to oversee their own section. There may be occasions where you will be required to work at one of our sister properties, Penrhiw or Roch Castle.

The successful candidate must have a good knowledge of pastry, butchery, fish prep, vegetable preparation and sauce.

You must be able to:

  • Manage and train junior staff.
  • Assist the Sous Chef and Head Chef with menu and dish development.
  • Help the team maintain high standards of hygiene.
  • Follow the rules of health and safety and ensure the rest of the team follow these rules.
  • Monitor portion control and food waste to help maintain profit margins.

We are looking for a candidate that has these necessary skills:

  • Excellent cooking skills and knowledge.
  • A clam, controlled temperament.
  • The ability to distribute work/tasks.
  • Good organisational and planning skills.
  • Self-motivated.
  • Work well as part of a dynamic team.
  • Have experience of working in a busy kitchen.
  • Understanding of costs and how to achieve margins.

Ideally the candidate would have achieved an NVQ/QCF Level 2 and have a valid Level 2 Food Hygiene Certificate.
