Sommelier - Hedonism Wines New Mayfair Fine Dining Venture with Michelin* Chef Ollie Dabbous

We are now looking for Sommeliers as Michelin* Chef Ollie Dabbous & one of the World’s best fine wine boutiques, Hedonism Wines have come together to create an amazing & innovative new wine & fine dining venture in Mayfair.

There will be two restaurants & a bar over the site’s three floors.

The ground floor will offer high quality all day dining for breakfast, lunch & dinner as well as World-class afternoon teas from an exciting, innovative Michelin standard menu.

The second, the Mezzanine, serving lunch & dinner only is aiming for two Michelin * cuisine.

The menu will use the very best ingredients, respectfully treated, to create light elegant dishes, both organic & theatrical.

We are looking for Sommeliers whose experience suits either style of dining.

As a Sommelier you will be in a working environment that has learning & development as its core ethos with a focus on team work & excellence in everything we do.

We offer all members of the Sommelier Team full sponsorship for all Court of Master Sommeliers and WSET accredited wine & sake training courses.

The sommelier team will be run by Director of Wine Piotr Pietras, Master Sommelier & World’s Best Young Sommelier 2017. The wine list will be an impressive collection of the most select vintages & producers, as well as being the largest restaurant wine list anywhere in London.

Destined to be the biggest opening of 2018, this venture is also being designed with a view to creating a sustainable working environment that helps to promote a healthy work/life balance for all staff, allowing you to grow & develop your career.

We ask for a minimum of 2 years fine dining experience with Michelin * or similar standard of service. CMS Certified Sommelier or WSET Level 4 diploma is preferred.

As Sommelier you should be attentive, keen to engage with diners & immaculately presented at all times.

As Sommelier your duties will include:

  • To oversee a section within the restaurant supervising Junior Sommeliers
  • Ensure that all wine is served in proper glassware & in proper condition 
  • Dealing with guests & answering any questions regarding wine list
  • Pairing & explaining wines with tasting menu
  • Building a rapport with regular guests
  • Looking after the wine cellar & deliveries
  • Taking an active role in the development of junior team members
  • Maintaining the standards set for service by the Director of Wine

You will be working alongside Piotr, Ollie & the restaurant team playing a crucial role in the delivery of one of the most innovative Michelin standard fine dining experiences offered anywhere.

Starting salary £28,000-30,000 plus incentives

Good spoken English is essential with additional languages an advantage.
