Head Waiter

We are looking for a Head Waiter to join the Food and Beverage team working with Ryan Humphrey  our F&B Manager and his team of 16 running our Michelin starred Dining Room and less formal Brasserie, Grey’s with the Food and Beverage team.  Ryan is assisted by a Restaurant Manager, Head Waiters and Sommelier who cover all areas of the food outlet, not just fine dining.

Our new executive Chef, Niall Keating, has taken on the Michelin Dining Room and hopes to retain our stars with his new tasting menu.  January has also seen the launch of new menus in Grey’s.

We hold 4 AA rosettes and have recently been awarded 8 out of 10 in The Good Food Guide.

The team covers the following operations:

• The Dining Room - 40 covers, open from Wednesday to Sunday dinner only, with three seasonal tasting menu’s
• Grey’s Brassiere -50 covers, open 7 days a week lunch and dinner offering a lunch and a la carte menu
• Small private dining room - up to 30 covers offering various party menus
• Afternoon tea - 20 covers, open 7 days a week.
• Hotel lounge menus
• Corporate events, exclusive use events and weddings of all sizes
• Room service menu
• Wine, champagne, cookery masterclass and other hotel promotional events throughout the year

Skills and experience:

• Stable cv with experience in a 5 star or Michelin environment
• Ability to communicate with team in a professional manner
• Able to teach and train the team in a positive manner
• Fluent in English – both oral and written
• IT skills to be able to undertake ordering, printing menus,setting rotas and completing timesheets
• Full understanding of standards and regulations required in a restaurant
